Well we have season 4 to finish book 3. They could do 2 seasons a book for 4 and 5 so we have 5 years before book 6. After that another 2-3 season for book 6. Martin says it will be around 1500 pages. So as long as Martin can finish the story in 7-8 years, we are set.
Lastly there is also other works and stories in the GoT universe so you could make a season about the history of Westoros if you were in a really rough spot. Like Robert Baratheon rebellion against the Targaryens.
But that question is still 5 years away, not to mention Martin told the directors how his story ends. So they can always do an alternate ending like in Full Metal Alchemist.

Took him 15yrs to finish one book if I remember correctly. That worries me with 1 season roughly per book. That doesn't give him much time to write the books. Hopefully they don't start making filler episodes.
The past couple have taken about 5-6 years to write and release. They've estimated the last couple books to be around 1500 pages, judging by how they're doing a 900 page book into two seasons, I can see them taking quite a bit of time on book six. At most they'd have to wait a year or two for book 7.

Seriously renewal wise doesn't GoT have a problem with having very expensive shoots? If GoT were cancelled it would be budget reasons not ratings. Though articles suggest they make enough money through dvd and selling broadcast rights worldwide.

Granted, GoT is likely the most expensive thing they've been a part of and piracy is everywhere, but I'm fairly certain HBO is making its money back, particularly with their relatively new HBO GO service. I would be curious to know how the revenuse stream associated with GoT looks though.

Book 3 is more than 900 pages - from what i recall it's between 1100 and 1300 (the paper back is split into 2 parts). Same for book 5.

Books 4 and 5 do not exactly follow each other chronologically. Basically, the first half of book 5 happens during the time of book 4, but just shows you things in different places and/or from different viewpoints. Book 4 is smaller than book 3, but book 5 is big.
If it were me, I would combine book 4 and the first part of book 5 into two seasons (seasons 5 and 6), and then do the second half of book 5 in season 7. That means season 8 would been in a book that is not written yet, and if the show is not cancelled they will need to start producing season 8 in about 4 years time.

Also keep in mind the longer the show goes on, the more expensive the actors will be, especially given how its only getting more popular.
