The "Sushi roll name" actually lists all the really common sushi rolls that most Japanese restaurants carry. Then depending from establishment to establishment, restaurants will have their own signature rolls but ingredients will be listed on the menu.
If you visit SF, we'll go out for sushi. np

If we're talking traditional sushi, then the ingredients should be very simple: vinegared rice, wasabi, fish or other topping, and sometimes seaweed.
The rolls that you see, things like caterpillar or dragon, aren't traditional and it does get confusing as to what's actually in them.
Conveyor belt sushi is usually a good place on a budget to try a lot of traditional sushi. I'd stick with basic stuff like tuna, salmon, hamachi/yellowtail, and then branch out from there. When you're a baller you can go to a nice place and get an omakase (prix fixe) course. But conveyor should be good for a first-timer. Plus, it's cool. As soon as you sit down you can grab stuff and start eating.
Hey look, I found this place for you: http://www.sushistation.us/

Supposedly most vietnamnese people prefer bbh over pho. I had bbh before, I didn't really like it. The basic viet food is pretty accessible. Banh mi tiet, pho, eggrolls, rice dishes, vermicelli, etcetc are all good, no weird or exotic tastes.

Finally on the megabus home, it was delayed like an hour cuz of mechanical issues.
I'm gonna eat a huge bowl of pho when I get home. New Orleans has amazing Vietnamese food because we have so many immigrants.

Whenever I think of Westminster I will always think of that one time when I was working for Anime Expo, and we had a meeting that went late until like 2-3AM, so we went out for Viet food there.
To my surprise, there was an exotic fruit store that was open 24 hours next to where we ate.
I guess some people just really get those midnight cravings for some cherimoya and jackfruit...
