You w ant the regular Gaming 5, not the ITX variant.
I'm guessing it'd be this one then? Gigabyte GA-Z97MX-Gaming 5 Micro ATX LGA1150 Motherboard
No that's micro.
You want the GA-Z97X-Gaming 5.
Keep in mind that if you're using the mobo/cpu graphics then you aren't using the video card for anything. You may want to repurpose it or sell it if you don't need it.

I still have around ~$100 to spend. Anything we can upgrade?

Any Nvidia GPU's similar to what you're suggesting?
GTX 760 is the nvidia equivalent of the R9 280, I'd say
GTX 760 is a little bit slower on average (depends on the game though, sometimes is faster) and is more expensive, so you'd need to cut things slightly elsewhere or just eat the higher price tag.
Nvidia tends to lose the price / performance side of things, imo. They have good drivers and I imagine that you don't get the small teething problems you get with amd cards sometimes (coil whine at high fps for example). I'm unsure but I just think that Nvidia GPUs run a bit cooler, I think a 780 might generate less heat than an R9 290. I think the premium can be justified. However AMD definitely is better in price / performance.

I don't get it, why did you switch power supplies.. that one is like significantly significantly significantly.. not sure how many times I should emphasize this... worse... than the Rosewill Capstone.

Something with bringing down the FPS on the gpu since its running super high. Superhigh=1000FPS ~ Changing it through a program or something.

Will the 450 W Rosewill be enough to handle the GTX 760?
A stock core i5 4690 and GTX 760 uses under 300w.
Plus you should not be judging power supplies based on advertised wattage as the one you have selected is only capable of 400w.
