Hi all :D fOrQQ here again.. been a while since my last blog, and since then I've had a few great successes in cooking, thought I'd share with everyone again^^

Dish 1: Pan-roasted Crispy Salmon with Herbs
Basically I decided my last crispy salmon wasn't as good as I wanted (looked burnt though it tasted fine) so I redid it :p Presentation wise, looks much better imo! I scored the salmon and filled the scores with a variety of herbs (oregano, thyme, basil, s&p) before panfrying. Topped over a simple Penne pasta and Lemon-vinaigrette. This was a very simple dish that I made in about 10 minutes.

Dish 2: Rose Veal Marsala
Again, this is a redo of my previous Veal Marsala. Somehow I still couldn't get the sauce just right (looks broken here >< ) Veal is actually a bit harder to cook than I anticipated...I still managed to overcook it lol...ended up more medium than medium rare. This is definitely a dish I have to perfect, so expect a few more versions of it in the future (gotta use up the Marsala somehow ;D )

Dish 3: Crispy Salmon over Spinach Risotto
This dish was actually inspired by one of my readers (thx Rayzorblade!) as he pointed me to a scallops and risotto recipe. I didn't have scallops, but I had a whole salmon fillet to work with (there's still more salmon coming up ). This dish is one of my absolute favourites so far- the contrast between the crispy salmon and the creamy risotto was a treat for my taste buds ^^.

Dish 4: Frutti di Mare
Again, after seeing Rayzorblade's recipe suggestions, I decided to try my hand at the famous Italian Frutti di Mare. Unfortunately, there was no lobster at all, frozen or otherwise. I substituted with bay scallops, mussels, and shrimp, and was actually quite nervous as I had never cooked bay scallops nor mussels before (only tried sea scallops which cook completely differently). I'm pretty happy with the results, and I definitely look forward to making this again with different seafood ingredients!

Dish 5: Pancetta and Sea Scallop Spaghettini with Curry Sauce (Italian and Indian Fusion!)
I actually made this dish with whatever I had left in the fridge, which was obviously a handful of pancetta and some bay scallops from my Frutti di Mare. I also wanted to try a different sauce, and I improvised with some curry powder and veal stock from the Rose Veal Marsala. The result was much better than I had expected (had no idea the sauce would turn out as good as it did ^^ lucky me).
Dish 6: Whole Salmon Fillet and Sauteed Creminis
As I mentioned earlier, I bought an entire salmon fillet and wanted to make different dishes with it. This was the last remainder of the salmon and I simply wanted to make a huge panfried fillet (wew comfort food). I added the sauteed mushrooms and believe me, it tasted as good as it looks :D:D:D

The pasta is because I'm trying my hand at Italian cuisine and pasta seems like a good way to start (or so I'm told). Seafood is just because it's awesome :D (my other past blogs - barring my seafood edition- have non-seafood dishes).

I picked up cooking by myself, either through online videos or recipes (though I own a few cookbooks now). I started at the beginning of July with no cooking ability at all and went from there. Just can't be afraid of failing (well, fear of burning down the apartment is always allowed) ^^

You've got some sweet cooking skills there..they all look so great! I can't decide >< The presentation is pretty awesome, just like that ones that are shown in menus at restaurants (though when I order them, for some reason, it never looks like the ones shown..)
On the other hand, I think better lighting for when you take the pics and possibly some minor photoshop work could really enhance the look of the dishes.
I don't have much knowledge in cooking, so sorry I offend you, but what is that light green sauce in dish 3? the one mixed with that macaroni type pasta (risotto?)

Is salmon cooked a different way, diff from just frying salmon up? My grandma likes to make Salmon patties alot and i think they are disgusting..
but if you cook them a diff way are they better?

wow, really nice work. Dish 3 looks especially good!
I'm trying to learn to cook this summer as well. I'm using one of gordon ramsay's books for tips actually :D I hope I can get to a point where I can make it look just as good as these dishes haha

man salmon tastes pretty awesome anyway you cook it, fuckin just eat it raw or pan fry it with some salt and pepper or whatever and its awesome already. makes me + kitchen smell super fishy afterwards though haha
dunno about adding flour to a patty though. haha.

Thanks for the compliments :D I want to just keep the pictures natural which is why I didn't use photoshop on them. I think a lot of menu pictures nowadays use photoshop (which is probably why it comes out different when you actually eat it), so I want to show what can be done without use of any CG lol
As Xeris said, the green sauce is a spinach puree (basically blanched and blitzed spinach with cream and a bit of garlic). The result is a nice spinach scent in the risotto.

I never had the salmon patties you described before O_O I think there's a big difference in frying it even with the skin on/off, and also if you poach it first (I never do though).

Thxthx^^ I'm sure you can do just as well if not better :D Actually Gordon Ramsay is probably my biggest inspiration in cooking and chef culture. No nonsense, straight-to-the-point cooking kekeke
