On gpu: Nope, I'd get Wom's 7850 for a little more (like $40, $10 if rebate works, which you're including), it's significantly better.
The motherboard should be ok, as long as you aren't going balls to the wall with a ridiculous overclock. (and if you aren't overclocking at all, may as well stick with h77, can save some more $$$).

Building a new computer soon, any help or suggestions would be appreciated!

HX750 is unnecessary. 650w is more than sufficient for an overclocked SLI GTX 570 2600k configuration.
Get a better CPU and GPU first before wasting money on higher frequency memory that does close to nil for gaming. Just get your standard 2x4gb 1600MHz cas9 for like $40.
Use money saved above to get a GTX 670 instead of a 570.
Might as well get a NH-D14?

PSU, CPU cooler, -k CPU, and the motherboard are all ridiculously overkill for a non-OC, non-SLI build. The RAM is ridiculously overpriced, especially for a gaming only build. Just buy some set of 1.5v 1600Mhz Cas9 RAM for half that or less.

Get rid of heatsink, 2600k, and Z77. Get H77 and a non-K CPU instead. And a 500w unit instead.

EDIT: I don't have a reason NOT to hit the $1200 budget mark, but is there no practical way to do that without OCing or going nuts with an SSD?

Unless you want to waste money on features you've said you're not going to use, you won't hit the $1200 mark without doing something screwy, like buying tons more SSD or HDD space, or getting a hugely expensive gimmicky case, or buying features you've literally said you won't be using.

Do you even need Hyperthreading for gaming? Generally not... as was mentioned, a 2500 will have identical performance in most games.

Whether the GPU is too much overkill is up to you. My crystal ball is a little cloudy right now, so I'm not sure how close you'll be to maxing BF4, let alone what you consider high enough settings, or unplayable framerate.

No, the video card isn't overkill assuming you're not using it to drive some POS monitor. Even if it's 1920x1080, doesn't make sense to buy a $400 video card if the monitor can't even display stuff nicely, right?

Or all the way to a Thermalright Silver Arrow / Noctua NH-D14, though I highly doubt you have the guts to overclock that high. HR-02 is a good mid-range choice.
I would personally get a 3570K so that if you ever feel like doing SLI 670's you have PCI-e 3.0 bandwidth. Yes, it matters a bit. Might as well.
I'd also get a nicer case but the 912 works.

I said that cooler was overkill because you said originally no OC. You don't need an aftermarket cooler if you aren't OCing. If you are, or plan to, you should get a decent one.

It's not going to be quiet when cooling a quad core desktop CPU, particularly not overclocked...
Also, some of your other picks don't make much sense if you value noise levels. How much do you care about noise?
(Antec 900 could easily be considered a downgrade from a CM HAF 912, though the 900's gotten a few feature upgrades over the years. Certainly the original 900 is much worse.)

It makes no sense to pair a K CPU with a Z77 mobo if you're not going to overclock. And since you have the budget, why not leave that option open? It's easy as pie to get ~20-30% more CPU performance. And it's virtually a necessary thing if you ever add a 2nd 670 for SLI in the future. Those monitors are okay.
Antec 900 is not an upgrade, it's a gigantic piece of shiet.
If you want a nicer case, here's a few good ones. Note that some of these are ATX Full towers and are absolutely enormous. Mid-towers already have plenty of space, so you were warned. Final build (for now) + Show Spoiler + I'll think on this for a week or so. The price is well within what I was prepared for so I basically just don't want to buy anything stupid and I think you guys have helped me with that. We'll see if I decide to overclock, it will probably depend on what fps I get but I'm not expecting any issues with this build in the near future. Again, thanks A LOT everyone for all the advice, if you're ever in Dallas I owe you a beer or two.
EDIT: Is the Antec 900 really that bad? It gets pretty good reviews. I'll think about the cases some more tonight, thanks for that feedback.
At this point just assume I will overclock eventually, I've done a complete 180

The original Antec 900 sucks. It has no backplate cutout, no tool-less features, no dust filters, traditional HDD mounting, and so on. Of course the case has gone through about half a dozen revisions over the past five years or so.
