I think Doran's openings were all the rage last fall before the jungle remake. Times have changed.
That's another reason why you shouldn't listen to popular opinion on things. If doing something makes sense to you, then you should do that instead. I actually think opening doran's is fine with soraka and have never felt I needed pots with soraka, but rather that if I bought pots with her, they were going to waste. Maybe at my elo people aren't aggressive enough.
I know some people still argue that sion and morgana have enough innate sustain that they don't need it. Jungle fiddles doesn't need it. I doubt nunu does.

starting doran in the jungle is good on some junglers if you can get good leashes, starting dorans on AD with sustain is good if you are pushing hard.

i'm moving on from support to try jungling/toplane (I leveled 1 to 30 as janna while playing with my friends, so i'm really good at it but at the same time I don't know how to do anything else). so i bought lee sin, but idk what to build. I understand how to gank but itemwise idk if I build AD or tank.
Boots pots + dorans blade x2 + HoG then what?

Depends on your lane opponent and the teamcomps. Against aps, hexdrinker, against ads wriggles or a phage. I like brutalizer if you get fed early on.
I usually just build whatever I feel on him from the attack damage tab and mix in some defensive items. If you are unsure what to buy at a certain time, get an aegis.

Standard lee sin: Boots, doran, doran OR wriggle, HoG idk if still good item to build, phage, hexdrinker, finish boots, frozen mallet, randiuns, maw of mortilius, another tank item.
Fed lee sin: boots, doran doran, bloodthirster, hexdrinker, G.A, maw, LW, another BT

It's pretty simple. Every jungle starts boots. You don't want to die to ganks. You are forced to start boots. There's many more reasons why dorans first is trash but there you go.
