Most people do like having things culminate in a straightforwards finals since it's more 'exciting', so the organizers are giving them what they want. Sure having the players play a bunch rounds of Swiss (to name just one example) might be less random, but you end up with players unceremoniously winning with rounds to go, games that viewers don't care about etc. Ah, the mythical "most people" the ultimate argument for any dumb corporate decision. It's the same bunch of hypothetical beings as has been used for years to argue for any randomly nonsensical choice around the game - and in fact around almost anything on the market nowadays. It's mostly a smoke screen for the cheapest solution though.
It's true that no one has done a study to establish which format is most popular, but the opinion that single-elim. is most exciting is a very commonly expressed one. Additionally many viewers tune in to watch the last few rounds of a tournament (between supposedly the best players), and single elim. certainly streamlines that and ensures that you don't get stuff that lowers drama like dealing with upper bracket disadvantage. Of course feel free to dismiss anything you don't like with more empty rhetoric about corporate decisions.

Maybe this answer is provided elsewhere so apologies in advance. But is there a way to watch the tournament from the beginning but on a lag. Lets say I get off work at 6:00 PM ET, half the tournament is done already. I would love to start from the beginning.....

Wish it was streamed on YouTube so I could rewind the broadcast and watch it as live. Usually what I do for GSL as I’m rarely up early enough but just watch it on a delay as if it’s live which works really well on YouTube.
Will any of the broadcast be up in VoD form before the actual live broadcast finishes?

as far as I know they usually are accessible as vods on twitch while it is being streamed, I agree though youtube is better

If you just go to https://www.twitch.tv/starcraft/videos you can also click on the currently live video and watch it from the start
Though twitch vod thing can be quite buggy if you skip time a lot
