I have watched the first two eps of FMA and they were pretty cool, but the general tone seems to be that I should just watch Brotherhood. It should also be noted that I watched 'Please Teacher' and in hindsight, it was crap.

Anyway, as far as wacky stuff goes:
Detroit Metal City is pretty wacky. It's also rather short so you can get it done in a snap and leave you craving for more. It doesn't take itself serious and it's just good fun overall.
Yakitate Japan is a definite recommendation. It is a solid shounen comedy about baking bread. Yeah, that's what I thought. You're probably thinkinig it's either very boring or incredibly awesome. It's the latter. High on energy, super high on burning spirit.
Sayonara Zetsubou Sensei is a weird crazy comedy with a lot of energy, but the style is very... peculiar. There're a lot of visual gags and entire episodes based on puns. You might think it's really boring. But I encourage you to watch the first two episodes to check out if you like it. If you do there're a few more comedies that are in the same style.
A show I think you'll really like is Baccano!. It has a lot of characters and it just very cool and slick overall. It dances around the genres and shows you seem to like.

I think more anime creators should write their own stories when they catch up to a manga because there is nothing more god awefull then filler.
Most anime fans are if anything purists. I have set in a room where literally 90% of the room stood up and left because cowboy bebop the movie began and was English rather then Japanese.
Full Metal Alchemist was huge and everyone loved it, then comes around season 2 and people start hearing that the first season wasn't loyal to the manga and a legion of angry fans start calling it the worst show ever and that it's ending is bad (the part that was improvised, suprise suprise).
I preffer the season 1 story to the season 2 story, but i can understand this may differ for some. What i will never understand is how people can enjoy 2 more then 1. The execution of the story is just far better in 1. The 2nd has massive trouble in deciding what it wants to go and what mood it wants to set.
There are countless situations that are serious and get massively interrupted by the need to make a stupid joke or some face deformity for a quik laugh when the situation is anything but funny.
So for me 1 will always be the better but i suppose to each his own, but i really can't stand how people back-tracked on the first season due to some knee-jerk reaction at realising they liked a show that didn't keep true to a manga.
Any criticism that isn't founded on "zomg it's not liek teh manga, ergo it sucks balls" is valid.

The stories with the Elrichs searching around, and their exploits was very well executed, and that stuff mostly got brushed over in Brotherhood. I'd say that the first series was better, up until Lab 5. That's partly because I feel Brotherhood tried to rush its way to get to the "new" manga stuff, since everyone had already seen the early material. But after Lab 5, the first series began to start going downwards, and Brotherhood started to get better. Brotherhood would start introducing more good characters, and characters like Mustang actually got to do stuff (like, he actually got really cool battles). Happenings in the past would become more fleshed out, and the world itself would be expanded upon with things like that war in the north, or that country in the East. I felt the ending was just really epic and well executed for the most part as well. The original series would introduce that woman (I forget her name) as the main villain, and I dunno, it just started to go flat. Then all the sudden Germans are bombing England with Zepplins in WW1. :/
On another unrelated note, I've decided I'm going to say "animes" now when I'm using it in plural form, because whoever keeps saying "you don't want to say chineses?" really annoys me. Animes like FMA would be better with Giant Robots. Animes like Lucky Star are trash.
