Since I'm unemplyed, and my father soon to retire due to invality, we have spend some time together watching movies. Some weeks later, I noticed my dad actually started to watch Japanese and Chinese movies because I think he watched all of what western Netflix can offer (ROFL). One day, I saw he was watching Rurouni Kenshin Movie, or Samurai X real action movie if you want. I joined him and we actually watched the 2 of the films I don't remeber well if they were 2 or 3.
"This actually comes from a Japanese cartoon, you know?"
"Really?"
"Yes... (checks mobile)... This is how the character looks like in the cartoon"
"Wow, they actually got them pretty right!"
"Yes, it's called Anime, and it's pretty popular on todays young people"
"Have you watched?"
"Of course, even when I was a kid"
After the film, which he liked a lot, I told him that I was going to look for a short anime to watch with him, he agreed.
And well, I'm not an expert so I picked Attack on Titan. Why? Well basically:
- It has a very good modern animation. This was important since my father loves HD cool graphics. He likes when I play videogames in the living room TV so he can watch. BTW, he actually liked FFXIII a lot since he said "I like it because is colorful and I love the size-deep-perspective".
- Attack on Titan is a very 'mature' series. Some gore, some action, and actually not a lot anime animation clichés (like Chibi faces, Japan related stuff, etc etc).
- If the series does something right is the use of cliffhangers... oh god they do that well.
So we watched all of the 25? episodes, ending with the scene *SPOILERS* in which the Titan is revealed inside the wall * END OF SPOILERS*. And well here are some interesting stuff he said or he did:
- "Considering I'm almost 60, this was very entretaining".
- "Mikasa is my favourite character". Well he didn't say Mikasa, he said "the frustated girlfriend of the protagonist".
- *POSSIBLE SPOILERS* He actually belived Eren was done for. He expected them to figure out a way to communicate with "that Titan" (Eren's Titan form) and that Titan was going to be the protagonist.
- After like.... 75% of the chapters, he was like "oh..." demostrating the cliffhangers were super effective vs him.
- Saldy, even if he got most of the subs, he said they were usually too quick for him.
- The most interesting thing is that he said he found a lot of connections to the Nazi culture. Like he said he watched a video about a Nazi branch that was researching their ancestors and that they found leads that aryans came from giants... he connected 2 dots there.The looks of people, the uniforms, the villagers a lot made him remeber the Nazi for some reason.

I actually watched Kill la Kill some days ago and, since I did some research, that anime was created by the same guys... yeah... he would have thought I had a mental sickness
I actually wanted to show him a clip of kill la kill to say him "this is a bit more traditional anime than attack on titan"... just for the lolz

You could try something older like Legend of the Galactic Heroes if you want to show traditional shows. Though it is a bit unique in being in space and not trying to sell "toys" as the main reason for being made.
If you want to show that normal dramas are made in Anime as well you wouldn't go wrong with Usagi Drop.
I think many of the series that are highly rated are a bit too focused on the Japanese culture and other Anime in particular. Not great as first series as they contain a lot of satire and jokes based on previous content.

I have the next one in mind: Cowboy Bebop. I've read that it's a classic and the setup looks very good.

Cowboy Bebop is excellent, also consider Samurai Champloo if you're going for that route
Alternatively, Miyazaki films are honestly fantastic, even if they're entry-level
If you want to go off the deep end show him Kampfer for porn or Yuru Yuri for schoolgirl mutual crushes
If he liked the kind of crazy, physics-defying action in Rurouni Kenshin, try Jojo's Bizarre Adventures or possibly Darker than Black

The Rurouni Kenshin was just the live action movies, not the anime. And honestly I don't think I'll push him deep in "anime culture".

Keep him away from the "deeper" anime cultural properties. They simply take way too much knowledge of the culture (both of anime & Japan) to understand. He'll also get culture shocked pretty hard, which screws up the enjoyment.
Next is to figure out what types of series he prefers. Attack on Titan was a good choice, but there's good anime choices for all types of interests. If you think Legend of Galactic Heroes might interest him (all 180+ episodes), I'd also recommend Bablyon 5, the US Live Action series. (Fallen in popularity, but if he likes Attack on Titan, there's a lot he'll like in Bablyon 5 as well.)
If you want to go with the Movie side of things: for the family flavor, the Ghilbi movies are good ways to go. For "adult" style, try Jin-roh the Wolf Brigade. Vampire Hunter D: Bloodlust is another really good choice. And I don't think Ghost in the Shell (the movie) has held up as well over the years, but it's there. (Though I HIGHLY recommend the Stand Alone Complex series.)

Your dad is awesome for actually doing this with you. My Dad is cool as well but I'm 100% sure he would draw the line at any mention of anime

I think you would be surprised. My father likes Spirited Away much more than I do (as an example). Not all titles would work but I don't think you personally like all the titles either so that is fine.

Good choice. It's serious, funny and has great action at the same time. And more importantly, it avoids most of the cringeworthy anime tropes.

I really wanted to go and watch FMA (any), but since it actually contains (both) lots of cringeworthy moments - which I actually like but I think only a person that watches a good chunk of series can learn to like - I decided to go for another like the mentioned Cowboy Bebop

You should honestly consider watching Monster.
If you want something incredibly well written anyway.

Cowboy bebop is pretty nice, it's chilled, has an awesome blues soundtrack and deep characters. It also has some small references to western popculture like f.e. to alien. It starts of slow though and continues to take it's time to develop it's characters and ofc while having aged well imo, it's still pretty old, so don't expect a lot of shininess and cool effects.
It's noteworthy that CB is mostly unconnected episodes and the character development kicks in pretty late in the series. It's still great imo, but It's very different in that regard to attack on titan (in other regards as well).
My first choice for bringing people into the anime culture is usually death note. Except for Ryuk it could easily be a live action series (and the 2 live action movies are actually decent), doesn't culture shock too hard, has a dark humor and is very well written. The final end is a bit meh, but outside of that it's pretty fantastic.
Monster goes in the same direction but is a lot slower. If your dad can stand crime stories I recommend both.
I think darker than black is another one that doesn't culture shock too much, it's essentially x-men in more serious. The opening is a bit japanese though.
