Long time no see, TL! :D Sorry for my absence~
I've got a recipe for you!
INGREDIENTS
- small pinch of salt
- 2 tablespoons of honey
- juice from a lime
- lime zest
- 1/2 cup of blueberries
- 1/2 cup of brown rice (or any rice of your choosing) + 1 1/4 cup of water
- 1 cups of coconut milk
- 1 mango (chopped; reserve 2 large slices to create a Protoss symbol)
*note: The blueberry sauce is completely optional.
PROCEDURE Prep time will be about 10 minutes. Cook time is roughly 20 minutes. This makes 3 servings.
Calories per serving: ~250 calories
- Bring 1 cup of water to a boil. Once your water has begun to boil, cook brown rice as normal.
- This should take about 10 minutes.
- Add your 1/2 of your lime juice, salt, 1 1/2 tablespoons of honey, and your coconut milk to the rice.
- Stir the rice and combine.
- Sprinkle in your lime zest and stir.
- Add in your chopped mango.
- Place blueberries, lime juice, and 1/2 tablespoon honey in a pan on low heat. Cook for about 5 minutes.
- Remove blueberries from heat and pour into a food processor. Process until smooth.
- Scoop rice into a small bowl. Place a plate, upside down, on top of the bowl of rice. Hold the plate tightly against the bowl and flip the bowl over to create a small rice dome.
- Serve rice with blueberry sauce.
- Eat!

Nice, gonna try this out. Since I'm currently doing a year abroad in South America, I very conviniently have Mango tree in my garden, so I'm always looking for recipes that include Mangos.

You should try making a mango salsa (mango + cilantro + red onion + lime) and putting it over grilled fish. :D

It's definitely more sweet than sour. The blueberry sauce is a little tart though.

I love rice dishes xD All i seem to eat lately is "x" with rice xD This could add something else to my normal rice which is just white rice and pea/sweetcorn xD

Although I'm kind of at the end of the world here so it's always very hard to get "unusual" ingredients but I'm definitely going to make that salsa for the next asado (bbq).
My neighbor's also got an avocado tree by the way where i can steal from :D Unfortunately I'm only going to stay here one more month T.T

oh dude. this looks super easy to make, and i have all the ingredients, just gotta stop by the grocery store to get a fresh mango. looks like something excellent to cook for a gf - it's interesting, exotic, and not difficult to make,
