Hi TL!
I've been hyperproductive this week (knocked out like 4 recipes just this past weekend. holy crap), so here's another recipe to try.
This recipe makes a lot of food... So be prepared to have a ton of left overs once you make this dish. The prep work for this dish is a bit more than usual, so be prepared to spend a lot of time in the kitchen. You can cut down the prep work by swapping out the homemade sauce by just getting a jar of marinara.
This recipe is for Temp0, the sc2 song writer /streamer, hence the name:
INGREDIENTS
- salt
- pepper
- oregano
- 1 tablespoon of olive oil
- 6 cloves of garlic
- 1/2 onion
- 1/2 cup of parsley
- 2 cans of tomato paste (about 12oz total)
- 3 zucchinis
- 2 yellow squash
- 2 1/2 cups of ricotta cheese
- 1 cup of mozzarella cheese
- 1 1/2 lbs of ground beef
- 1 package of pepperoni (about ~8oz)
- 1 lb of penne pasta (ziti pasta is traditionally used, but I substituted penne)
PROCEDURE
Total prep time will take about 50 minutes. Total cook time will be about 45 minutes. This will make 8 servings.
Calories per serving: ~570 calories*
*note: The ingredients used in this recipe were the lower-calorie/lower-fat options (such as 90%/10% ground beef and fat-free ricotta cheese. If you plan to use higher fat content ingredients, your calories per serving will be much higher).
- Dice garlic and reserve half for the vegetables.
- Heat a skillet on high and add half of your olive oil.
- Cook your ground beef. Season with salt, pepper and oregano.
- When beef is done, remove from heat and set aside.
- Set a pot of water to boil.
- When water begins to boil, add pasta and salt. Make sure to stir the pasta occasionally in order to prevent the pasta from sticking together.
- Allow pasta to cook and strain once the pasta is done.
- Place your pasta in a baking dish.
- Add your ground beef to the pasta and stir.
- Roughly dice your zucchini, onions and squash. Since these ingredients will be blended to make the sauce, you can do a quick and rough cut.
- In the same skillet you used to cooked the beef, add in the remainder of your olive oil.
- Place your vegetables in the skillet and season with salt, pepper and oregano.
- Saute your vegetables until soft (about 10 minutes).
- When vegetables are done, remove from heat and place vegetables in a food processor.
- Blend your vegetables until a smooth sauce forms.
- Remove from the food processor and place the sauce back into the skillet.
- Stir in your tomato paste and set aside.
- Preheat your oven to 450° F (232° C).
- Take 2 1/2 cups of ricotta cheese and stir it into your pasta and beef mixture.
- Slowly pour in 3/4 of your tomato vegetable sauce into the dish. Stir to combine.
- With the remaining tomato sauce, coat the top of the pasta.
- Take half of the mozzarella and sprinkle it over the top of the pasta.
- Place your pepperoni on top of the mozzarella.
- Sprinkle the remaining mozzarella over your pepperoni.
- Bake for about 10 – 15 minutes or until the cheese becomes golden brown.
- Remove from oven and let cool for about 5 minutes.
- Sprinkle with fresh chopped parsley.
- Eat!

I love baked ziti, and yet somehow I've never put pepperoni on it when it seems so obvious now.

Well, because Temp0 gave me the idea for pepperoni baked ziti. :D He said it was his favorite dish, so I decided to try it out.
The chorizo egg bites are kind of like mini egg frittatas. In this case, instead of being cooked in a skillet, they're baked in the oven. I'll go into more detail about them when I post the recipe. :D

Wow this makes me want to get Italian food for dinner now. I'm also looking forward to the Chorizo Egg Bites. Did you make the chorizo from scratch, like with ground beef, cinnamon, etc?

This reminds me of a fast food Italian place I used to eat at as a kid named Fazoli's and their "Pizza Baked Spaghetti", but I bet this tastes much better, even without unlimited breadsticks

Hmm my family has had baked ziti multiple times before, never with Pepperoni though. I look forward to trying it!

Ziti is amazing. Had the dish the first time myself around a month ago. It's like a 1000x better lasagna.

On the sidebar I saw "Food porn!: ba..." and I instantly though bacon. This might not be bacon but it still looks damn good!
