Hi TL!

I've been hyperproductive this week (knocked out like 4 recipes just this past weekend. holy crap), so here's another recipe to try.

This recipe makes a lot of food... So be prepared to have a ton of left overs once you make this dish.
The prep work for this dish is a bit more than usual, so be prepared to spend a lot of time in the kitchen. You can cut down the prep work by swapping out the homemade sauce by just getting a jar of marinara.

This recipe is for Temp0, the sc2 song writer /streamer, hence the name:

INGREDIENTS
  • salt
  • pepper
  • oregano
  • 1 tablespoon of olive oil
  • 6 cloves of garlic
  • 1/2 onion
  • 1/2 cup of parsley
  • 2 cans of tomato paste (about 12oz total)
  • 3 zucchinis
  • 2 yellow squash
  • 2 1/2 cups of ricotta cheese
  • 1 cup of mozzarella cheese
  • 1 1/2 lbs of ground beef
  • 1 package of pepperoni (about ~8oz)
  • 1 lb of penne pasta (ziti pasta is traditionally used, but I substituted penne)

PROCEDURE

Total prep time will take about 50 minutes. Total cook time will be about 45 minutes. This will make 8 servings.

Calories per serving: ~570 calories*

*note: The ingredients used in this recipe were the lower-calorie/lower-fat options (such as 90%/10% ground beef and fat-free ricotta cheese. If you plan to use higher fat content ingredients, your calories per serving will be much higher).

  1. Dice garlic and reserve half for the vegetables.
  2. Heat a skillet on high and add half of your olive oil.
  3. Cook your ground beef. Season with salt, pepper and oregano.
  4. When beef is done, remove from heat and set aside.
  5. Set a pot of water to boil.
  6. When water begins to boil, add pasta and salt. Make sure to stir the pasta occasionally in order to prevent the pasta from sticking together.
  7. Allow pasta to cook and strain once the pasta is done.
  8. Place your pasta in a baking dish.
  9. Add your ground beef to the pasta and stir.

  10. Roughly dice your zucchini, onions and squash. Since these ingredients will be blended to make the sauce, you can do a quick and rough cut.
  11. In the same skillet you used to cooked the beef, add in the remainder of your olive oil.
  12. Place your vegetables in the skillet and season with salt, pepper and oregano.
  13. Saute your vegetables until soft (about 10 minutes).
  14. When vegetables are done, remove from heat and place vegetables in a food processor.
  15. Blend your vegetables until a smooth sauce forms.
  16. Remove from the food processor and place the sauce back into the skillet.
  17. Stir in your tomato paste and set aside.

  18. Preheat your oven to 450° F (232° C).
  19. Take 2 1/2 cups of ricotta cheese and stir it into your pasta and beef mixture.
  20. Slowly pour in 3/4 of your tomato vegetable sauce into the dish. Stir to combine.
  21. With the remaining tomato sauce, coat the top of the pasta.
  22. Take half of the mozzarella and sprinkle it over the top of the pasta.
  23. Place your pepperoni on top of the mozzarella.
  24. Sprinkle the remaining mozzarella over your pepperoni.
  25. Bake for about 10 – 15 minutes or until the cheese becomes golden brown.
  26. Remove from oven and let cool for about 5 minutes.
  27. Sprinkle with fresh chopped parsley.
  28. Eat!

Then you get this:

This dish needs more tofu. I'm disappointed.

YUM!

I love baked ziti, and yet somehow I've never put pepperoni on it when it seems so obvious now.

Well, because Temp0 gave me the idea for pepperoni baked ziti. :D He said it was his favorite dish, so I decided to try it out.

The chorizo egg bites are kind of like mini egg frittatas. In this case, instead of being cooked in a skillet, they're baked in the oven. I'll go into more detail about them when I post the recipe. :D

Wow this makes me want to get Italian food for dinner now.
I'm also looking forward to the Chorizo Egg Bites. Did you make the chorizo from scratch, like with ground beef, cinnamon, etc?

This reminds me of a fast food Italian place I used to eat at as a kid named Fazoli's and their "Pizza Baked Spaghetti", but I bet this tastes much better, even without unlimited breadsticks

Ziti is amazing. Had the dish the first time myself around a month ago. It's like a 1000x better lasagna.

huh then you probably did the lasagna wrong. From looking at the ingredients its pretty much exactly the same minus the bechamella.

This is the best tiramisu I've ever had, and I pretty much just order tiramisu for dessert anywhere I go. The foam and gelee preparations might be excessive, but the flavor profile with the kuromitsu and kinako was perfect.

That looks like you did a pretty decent job rolling them, actually. Needs more avocado though!

Having grown up learning how to cook from my grandfather (A chef who immigrated to the US from Italy) I really am going to have to try out that pepperoni baked ziti. I might mess with the recipe a bit of course - gotta do it "until it looks right"

I made this Saturday night. It took quite a while to put together. Some thoughts:

3 zucchini and 2 summer squash plus an onion... you will need a BIG skillet for this. There is a lot of liquid left over. I used a slotted spoon to get these into the food processor.

You really don't need that much garlic.

Try to cook the pasta, ground beef, and the veggies all at the same time. The ricotta is difficult to stir in if the penne and ground beef has been sitting out for a while.

I think I need to play with the final cooking time and temp. even after 15 minutes the cheese was starting to brown, but the ziti wasn't piping hot all the way through. I think this would be better to do a lower temperature, covered with tin foil for about 30 min, then uncover and raise temp for another 10. regardless the 450 at 10-15 min did not work in my oven.

This was definitely better day 2 reheated.

I might actually just use store bought sauce. I think it would taste better to me.

Anyway thanks for the recipe.

Thanks for your feedback :D

Here's some suggestions/solutions to some problems you encountered with this recipe:

For the veggies, yes, a bigger pan is definitely better! This allows the veggies to cook more evenly due to the bigger surface area. It'll also help the water evaporate faster. Make sure you keep the pan on high heat during this process. Once the veggies become soft (try poking them with a fork -- if they pierce through very easily, you know you're done).

When you start your recipe, leave all of your ingredients out.
If you're having trouble stirring in the ricotta, it might be because the ricotta is much colder than the pasta. If the ricotta is closer to room temperature, it'll be easier to mix through. Also stirring in the ricotta in parts will help too. Something that may help next time is placing your penne and beef in the oven to keep warm. Just set it on a very low temperature (like 250 degrees) and let it keep warm in the oven while you finish the rest of the prep work.

The final cooking time is really just to melt the cheese; it's not to re-heat the entire dish since the beef and penne should still be fairly warm from the cooking process.

Hope that helps!
