That looks like you did a pretty decent job rolling them, actually. Needs more avocado though! Having grown up learning how to cook from my grandfather (A chef who immigrated to the US from Italy) I really am going to have to try out that pepperoni baked ziti. I might mess with the recipe a bit of course - gotta do it "until it looks right" | ||

3 zucchini and 2 summer squash plus an onion... you will need a BIG skillet for this. There is a lot of liquid left over. I used a slotted spoon to get these into the food processor. You really don't need that much garlic. Try to cook the pasta, ground beef, and the veggies all at the same time. The ricotta is difficult to stir in if the penne and ground beef has been sitting out for a while. I think I need to play with the final cooking time and temp. even after 15 minutes the cheese was starting to brown, but the ziti wasn't piping hot all the way through. I think this would be better to do a lower temperature, covered with tin foil for about 30 min, then uncover and raise temp for another 10. regardless the 450 at 10-15 min did not work in my oven. This was definitely better day 2 reheated. I might actually just use store bought sauce. I think it would taste better to me. Anyway thanks for the recipe. | ||

Thanks for your feedback :D Here's some suggestions/solutions to some problems you encountered with this recipe: For the veggies, yes, a bigger pan is definitely better! This allows the veggies to cook more evenly due to the bigger surface area. It'll also help the water evaporate faster. Make sure you keep the pan on high heat during this process. Once the veggies become soft (try poking them with a fork -- if they pierce through very easily, you know you're done). When you start your recipe, leave all of your ingredients out. If you're having trouble stirring in the ricotta, it might be because the ricotta is much colder than the pasta. If the ricotta is closer to room temperature, it'll be easier to mix through. Also stirring in the ricotta in parts will help too. Something that may help next time is placing your penne and beef in the oven to keep warm. Just set it on a very low temperature (like 250 degrees) and let it keep warm in the oven while you finish the rest of the prep work. The final cooking time is really just to melt the cheese; it's not to re-heat the entire dish since the beef and penne should still be fairly warm from the cooking process. Hope that helps! | ||
