Yes, go into your beta folder, it has a config executable that will open up the config for resolution and stuff.

I have lost faith in SE and concluded they have no ability to make a game for the PC. Their console mindset from all the previous final fantasy games is too engrained and they just dont want to step outside of their safe zone and try things that are proven to work in other games.
I think you had a misconception about what they were trying to do. SE doesn't try to cater to the PC market as a huge chunk (and arguably the majority for this game) are console users. The system requirements for FFXIV are insane, many people will be playing it on PS3 over time in my opinion. Especially in Japan (a large target for them)

another thing I think many ffxi fans will disapprove of is the guildleve system it seems to be kind of like a minigame as is very common with square games, but they're necessary to really develop your character and (from what i know) you can only do/hold 8 at a time and then wait for 48 hours for it to reset

I think you have a great point which is that this game is not meant to kill WoW or Aion and the designers have clearly stated they did not use those games as inspirations (sometimes going as far as saying they never even looked at any game but FFXI)... This game is meant to be FFXI-2, any attempt to judge it another way is going to make it look really bad. Also my previous point about the fact that this is a game almost wholly designed for console play. I can echo the comment that playing with a gamepad is 150x better than with a mouse and keyboard. The menus and combat feel very responsive to me with gamepad, just like ffxi did.
I want to highlight a few of your open questions though and hopefully address them:

While it's true just at a glance a lot of characters will look the same, I actually think FFXIV's method will allow for MORE customization than FFXI because you can carry over abilities and traits from different classes. For example in FFXI I had a hard time playing a "unique" class of Sam/Rng because no matter what, in a party I needed to have Provoke so I was "forced" to use Sam/War. In FFXIV, my hope is, that I will be able to customize more to my preference while still maintaining "necessary" skills. Plus, the sheer number of combinations of ability/trait selection is going to hopefully allow for a ton of customization.

I think they've gone on record stating that there won't be an auction system. However the retainer system is kind of like bazaar on crack, if you haven't checked out the Market District please do. it's like an instanced area where people can set up shops, and I think the plan is to make it searchable such that it would be an improvement to the AH and it's not a crowd of people swarming around a single booth, it should actually look like [albiet instanced] market place with vendors supplied by players.
Regarding your own home, they haven't said any details about it that I know of but I have a feeling it's going to be extremely similar to moghouses. If you go to the market district instance area entrance (i think it's called Lotus Garden in Gridania) you will see they describe both the market district and "residential district" very similar. I'm predicting the residential district will be almost identical to mog house area in FFXI, but it seems more likely you can invite someone to your home with this setup.

Edit: I have registered my key into the account thing but when I try to log in to the tester site, I log in, it does the log in check then and then comes back with the page before saying I have to log in for the beta thing WHAT IS GOINGGGGGGG ONNNNNNNNNNNNNNNNNNNNN

The tester website is for testers who were invited to the beta, not people who got a key from open beta/fileplanet etc.

Switching spells between single target and AE. Is there a hotkey for it or do I really have to click the button everytime I want to toggle it?

I've played both WoW and FFXI (currently playing just FFXI) and the game just feels awful, keyboard and mouse controls are terrible. I was able to deal with FFXI for such a long time (6 years) because when it came out it was their first mmo and the mmo landscape was still rather raw.
But after being in development for so long now and having controls that are god awful (seriously what is so hard about hardware mouse and fully customizable keyboard??) I'm gonna pass on this until they improve the controls. I was in the Alpha for FFXIV and played all the way up until this beta hoping for controls improvement, but they just haven't done anything, oh well.

Seriously, try it with a PS3 controller or a PS2 with adapter (easier to setup). The buttons map perfectly and the interface works amazingly well.
Neither this game nor FFXI's UI were designed with PC users in mind that's why you're feeling the strain

OK, so former WoW / DAoC player + I played FFXI for about 9 months and enjoyed it...I like PvP and good storytelling; hate grinds and forced partying (FFXI). Should I try this game out, or just focus on Starcrafts + Civ5 when it comes out?

While I agree Blade, my 360 controller plays the game just fine, I shouldn't need to use a gamepad to enjoy the game. It's made for PC, and coming out for PC first, there's no reason they can't add fully customizable controls for the keyboard and mouse, none at all.
People have been saying since the Alpha (I myself wrote several lengthy feedbacks) saying how the game was great, minus the controls, and they did almost nothing except a tiny improvement to the mouse, which is still terrible.
I had hoped, given that over the years SE did warm up to player feedback in FFXI, that they would do so for FFXIV launch, but it seems not. I want the game to be good, but I won't be forced to use a gamepad on a PC, so I'll wait to see if they ever improve the controls, and then I'll jump in.

I'm trying to go to dev-na.ffxiv.com to download the client like it said to in the email, but everytime i go there it just says "Login process is running. If you change the screen, please press the NEXT button. " whatever the fuck that engrish shit means.. how do i get the client

There's a separate application to configure graphics resolution and gamepad, along with language. Speaking of language, a huge upgrade from FFXI in FFXIV is that people who speak both Japanese and English like me are fully supported - the IME works in both clients and it's very simple to switch the entire client's language (through the configure app). Both of those things were very difficult in FFXI
