I went through my list and the only one I felt might be appropriate for both of you was Natsume Yuujinchou.
I mean, ecchi is obviously out, giant robots/too much supernatural is probably no good. I doubt she'd want to watch something really violent, and she probably wouldn't get the humour of japan (I didn't get it until watching quite a bit of shows). Given your situation I don't think you'd want to watch a drama, as it would probably be too depressing. So the slice of life is the only genre I would imagine is suitable for the two of you.
If you decide to not watch Natsume Yuujinchou, then at the very least pick a slice of life anime. Minami-ke or Nichijou would be my next recommendations in that case, but both revolve more around comedy so that goes back to my point of her probably not getting japan's humour . At the end of the day, you're going to be watching it with her more for her than yourself, so something light-hearted and not too DEEP is your best bet.

How can you call a Miyazaki movie bad, that is blasphemy xp.
Howl's Moving Castle was my least favorite from him though, did not resonate the same way that his others did with me for some reason.

I didn't like Howl's Moving Castle. I thought it was bad. Howls moving castle was one of the worst anime i ever seen -.-. Glad Im not alone

I dont think any of them resonate with me tbh, but theyre all good to watch with family and/or people who generally dont watch anime. And well theyre decent anyway regardless of what you like. Same with Shinkai for the most part.

I didnt say no Shinkai. So you didnt read anything of the like. And yeah I like the Kon movies to, should probably get around to watching Tokyo Godfathers. But those dont resonate with me either. And you can pretend you didnt read that.
Edit : Went through Scrapped Princess recently. was putting it off because the name seemed pretty stupid. Turns out it was pretty good. And somehow managed to stay light hearted throughout which was nice. Finished Horizon aswell, Gonna revisit the rants and see what I missed.

Ano Hi Mita Hana no Namae wo Boku-tachi wa Mada Shiranai(Long ass names FTW), Hanasaku Iroha and Princess Tutu are three picks that are heartwarming and good picks watch with a mom IMO. Ano hi and Princess Tutu do have some sad parts in them but they both have really great drama if your mom is into that.
Kimi to Boku is a good slice of life.

I don't necessarily agree with the sentiment that watching a drama is a bad thing. It really depends on the overall theme of the anime and the message it sends, along with the type of ending. Obviously, you do not want to watch something with a bad something. Honestly, if I was in your situation, I would personally watch Clannad (especially afterstory). Yes, yes I know it's a very sad anime with very sad moments, but just think about it for a second.
What are the underlying themes and overarching message of Clannad? It's mostly about the importance of family, which I feel is very fitting to the situation. About how you need to stick together as a family, and through the main character you come to realize the importance of everything your parents did and what it means to be a family. Even through very difficult moments, that your family will always be there to support you and you grow and become better people because of it. Finally, even though the true ending might be a bit unrealistic (with regards to the deus-ex machina/magical components), it is a very happy ending and gives you a sense of catharsis as you can relate to the extreme pains that the MC had to suffer.
Let's be honest, no one likes to think or face the prospect of death. However, you will have to deal with it eventually. In my opinion, through Clannad you will be able to confront the reality of the situation (and I'm not saying anything about how she will die, since cancer treatment has gotten very good nowadays especially with the fact that you guys seem to have caught it early), but you will also be able to kind of show your appreciation of her as a parent if you know the realization Tomoya comes to. Plus, the overall message is just a positive one where that despite what life might throw at you, you can get through it with the help of family (family sticks together) and that things will turn out okay despite what tragedies/misfortunes you encounter. You come to appreciate and learn to cherish the ones that are important to you, and isn't that the thing you want to share with your mom in such a situation?
Note that this is just my opinion. She probably honestly doesn't care what you choose to watch, she just wants to spend time with you. The theme of family is why I suggested Clannad (and it's probably something I would recommend to anyone getting into anime because it's so well done, you can relate very well to the characters, and the message/story is good) but as long as you spend time with her, that's what matters.

Miyazaki films are probably a safe bet too. Spirited Away definitely. I personally didn't really like Princess Mononoke as much but a lot of people seem to enjoy it. I'd also suggest Laputa Castle in the Sky and Nausicaa Valley of the Wind. Perhaps also Kiki's Delivery Service.
On that note, currently reading Little Busters VN, so far finished Kud and Komari routes. Was liking the Kud route until the ending where everything just stopped making sense + Show Spoiler +jumping through spacetime with absolutely no prior lead-in or any explanation whatsoever? really? . Komari route, saw it coming the moment she said + Show Spoiler + for the first time. Clearly I'm way too familiar with Key's works. Got a tad misty-eyed of her route, but so far, LB hasn't been making the same emotional impact for me compared to Clannad/Kanon. Probably also doesn't help that I just recently finished reading Muv-Luv, Sharin no Kuni, and Steins;Gate. Time to start working on Nishizono.
Also Kud's facial expressions and behavior really remind me of Fuuko.

I would recommend Durarara, perhaps Baccano as well. Baccano has some kindof violent scenes (omg blood everywhere kindof type) so if disturbs you maybe not. Apparently Haibane Renmei is also good? Someone gave me that suggestion too. 5 cm per second is also pretty amazing as well.
I also like Angel Beats, I think that is also pretty safe choice.
