Sadly the PSX is most famous for its RPGs, if youre not a fan of thoose MGS is your only choice, the other good games probably have sequels that improved the gameplay a whole lot.

Spyro and Crash bandicoot, great games

"Jumping Flash" is a very nice first generation PS game. It's not for everyone though, so you may want to take a look at it first. The graphics will look dated, the concept is fun. If you're into platformers, there's the spyro the dragon/crash bandicoot series. I found them to be fun games, but if you're into platformers around that time, I'd suggest playing N64.
The megaman X series is all good, but you should also play megaman 8 anniversary edition. Also, if you're into megaman, I really enjoyed The Misadventures of Tron Bonne.
The twisted metal series is pretty fun, especially the 2nd one, if you're into those types of games.
If rpg's are boring or something, you could try playing tales of destiny 1/2, as they're not turn based, similarly you could try Threads of Fate as it's more of an action rpg than tales of destiny. There's also Brave Fencer Musashi and a list of others I'm probably forgetting.
There's the grand theft auto games if you're into those.
If you like resident evil, there's dino crisis 1 and 2.
I'd personally reccomend Legacy of Kain: Soul Reaver.
Finally, if you're into scrolling shooters, I'm sure there's quite a few, I personally enjoyed raiden project, although I'm sure it's not the best out there.
Of course there's a whole list of amazing rpg's too.

Spyro the dragon is awesome with lots of treasure to find. You can also check out the original rayman, and I definately recommend Brave Fencer Musashi. Extremely fun, not to mention lots of things to try out due to an ability to copy monsters abilities I bealive(I haven't played in awile).

FFT is really great, I recommend playing through it at least once. Breath of Fire 3&4 were pretty good as well, alongside with Chrono Trigger (the port) and Chrono Cross. Armored Core 1, 2 and Master of Arena were really enjoyable too.

Chocobo's Dungeon 2 Legend of Legaia Crash Team Racing Dino Crisis 2
My personal favorites not mentioned yet. Chocobo's Dungeon is extremely addicting, as is Legend of Legaia. I highly recommend those two.

1. Valkyrie Profile wasn't developed by Square Enix. (It was published by Enix pre-Square Enix and developed by Tri-Ace.) It's arguably the best RPG on the system. Star Ocean 2 might be more appropriate for you if you want a more free-roaming action RPG, as VP is simultaneously both action-based and turn-based. I'd have to recomment SO2 over Tales of Destiny 1-2. Vagrant Story's combat is kind of disappointingly repetitive, and you spend a lot of time swapping stuff in the clunky menus--unfortunate because menus and equipment management is 90% of the game, and the rest of the game is great. Oh and the Risk system is kind of a failure.
Tactics Ogre is the best TRPG on the Playstation definitely, with a lot more substance than FFT. FFT pretty much is newer, with better graphics, and a whole lot more character customization and growth in terms of learning skills and such, but TO gives you more solid mechanics and isn't nearly as filled with broke-ass characters and skills that make the game too easy.
Megaman X4's probably not as good as X1-3 but it's still great if you like those kinds of games. Later games in the X series are worse.
But yeah really, most games have been mentioned already. The PSX is really an RPG console on the whole. What genres are you into instead?

I loved the tenchu games. However the view distance isnt far enough and enemies end up seeing you before you can even see them. Not exactly somehting thats good for a stealth game.
A great game was Bushido Blade 2. Best drinking game ever. Loser takes a shot.

Damn I forgot about Bushido Blade.. man I had hilarously good 1 vs 1 's with that game. One of my friends would freak out on the controller when your weapons locked and you had to push buttons real fast to break away.. I laugh so hard I could hardly play.. haha man..
This reminds of another of my favorites, Armored Core 1 vs 1 was a fucking blast.

I personally dont think Chrono cross is a must play. Also I heard X5 blows hard ass. Liked x4 tho.

Really I just wanted to list a bunch of really great games and some underdogs (Wipeout and G-Police are the biggest underdogs of that list, they deserve a fuckload more attention then they ever received).
I meet too many people who owned a PSX back in the day and haven't played a quarter of the games on that list because they either didn't have the money or time, but a lot of them are worth playing and my top three are definitely still fun to play today regardless of the graphical and technical limitations they had back then.

Megaman 8 (pretty darn hard) Megaman X series FF9 is personally my favorite final fantasy. If your into fighting games, King of Fighters '99 is pretty good.

megaman x4 was really the only psx one I liked. holy fuck the zero sword combos were fucking amazing
when they started moving to the semi 3d style it really got kinda shitty IMO
