The guy is a former high school wrestler, if he were to hit either one of them, he would be in a far worse situation than he is now. Probably in jail and waiting to be sued.
Men have it tough in terms of self-defense. You can only really defend yourself against another man. Otherwise you come off as the aggressor.

The girls in my class went nuts that i laid a hand on this girl. i was like WTF are u serious i was just trying to defend myself. i never hit her or anything but i looked like a douche bag. double standard for the loss. The teachers tried to talk to me and said i couldnt lay hands on a girl..... the only thing you should take from this is the girls and teachers in your class are retarded. that or you have misconstrued the story a bit

So what happened is the young guy was being a douche and the old couple confronted him but the young dude totally smash them in verbal contest, the old fart got mad and either spit or kicked the young guy, the young guy responded and the old fart fell basically owned himself. the fat chick got in but was pushed away, two random idiots jumped in to subdue the young guy even though the young guy wasn't really doing anything (he wasn't attacking the old couple).

also, the classic example used in CJ and law classes to demonstrate the differences between voluntary and involuntary manslaughter would be a man coming home and finding his wife in bed with another guy. If he kills the guy right then while angry, that is involuntary. If he leaves and then comes back and kills the guy, thats manslaughter (or murder depending).
Point is, the law DOES make allowances for the feelings of reasonable people.
Watching the video, most of the people actually look rather reasonable. Only the guy in the greenish tinted shirt is trying to move young guy out. All of the guys in white seem to be either keeping people away from the young guy, or trying to get other people off of him.
last, it seems mr. ramsay apparently does do martial arts as a hobby. I've heard he is a black belt in an unspecified art. The video is a pretty good demonstration of keeping your hands up in a confrontation. Many actual self defense arts, when not teaching outright combat, but how to approach situations do teach methods like this.
2 of my co-workers (or bosses really) do bujinkan taijutsu and this stuff is taught there at some point, security // LEO training tends to teach this stuff at some point, basically keeping your hands up in the centerline area without being in a confrontational stance so that you would be able to respond to or deliver aggression without appearing to be confrontational or escalating.

The guy handled the situation like a champ, props to him. If that were me, I would have left the stadium or hall (whatever) after the slap, and I would've stalked the bitch at the parking lot, and then jump on her and kick her ass. And as for the second part of the question, yes I would hit an ugly woman, but if this was some chick doing the slaps I would just laugh which would've probably pissed her off even more.
