I don't hit back in general, be it a 3-year old kid or a a fucking gangster, unless it's a life threatening (now that's self-defense which is a completely different story). If a woman slapped me, I'd just brush it off. If she kept doing it, then things might be a bit different. I think the guy handled this perfectly well. Just because you're a senior citizen, you don't have carte blanche to attack whoever you want.

I would not hit a girl back if she slapped me. However, if she continued to slap/punch me I'd do my best to restrain her until she calmed the fuck down or until security came.

It depends on threat level tbh, if she has a weapon or is going all out with bad intents, the response would proportionately increase. My safety > all. Actually thats more or less how I'd treat fighting guys too. Try to do as little without endangering myself.
