I lost a couple fights because I forgot that I need to smite someone to get the effect, and that it isn't an item active. With the new smite duration it's not necessarily interesting to smite someone either.

honestly just because those 3 jungle champions were top tier in pro play doesn't mean anything for us. They all had really low win rates :p

Also, for someone who is bad at adc and wants an easy-carry champion (like how Ahri is for midlane; safe, easy to farm, good damage, some utility) who do you guys recommend? I've played Caitlyn a bunch but I rarely stay relevant and felt like I needed to be too proactive in my skill usage. I just tried Graves yesterday in normals and hard carried, though. His skills are much for useful in a straight up fight, which is apparently my strong suite. I believe Lucian is quite strong still but his kit feels too wonky for me.

You could try Corki. Otherwise playing Lucian some more might be your best bet.
If you don't mind not having an escape then Miss Fortune is a really high-damage, easy to use ADC in SoloQ.
I also really enjoy my games on Ashe though she may not fit your style.

I just play Ezreal when i want a safety adc, he's a caster so its easy to adapt to, and he can do everything himself if he needs to, and its very easy to catch back up in farm from the jungle and the lanes with ezreal if you fall behind.

Eeeeh ezreal feels like a noob trap imo, it's easy to get farm and not die but actually putting out decent damage is trickier and bad ezreals are just Q and ult bots (That miss Q most of the time). I think lucian and corgi are better bets especially if he's comfortable with graves

When Ezreal was free a short while ago I gave him a spin in both the adc and mid ap roles. He didn't seem strong or weak: in fact, he is pretty balanced in comparison to some new releases. However, I felt like Ezreal's raw damage was lower than a lot of other marksmens and thus requires a more niche comp to fit. Then again, anybody who plays enough can make any champion look overpowered given the right circumstances.

What do people recommend for typical jungle rune page? Are people running full AS for the most part? what about yellows? Hp per level? flat armor?

lucian feels a bit wonky until you get zerker greaves/zeal. then he feels amazing imo.
ezreal is my favorite adc lately. i find he requires a lot more concentration to play well, but man, it is so fun to go on a rampage with ez.
i also picked up kallista today. I wasnt going to, but I was looking at the list of champs and she was the only one that mildly interested me. she feels pretty smooth to play, looking forward to trying her out more.
