unit speech = speech units make (on screen) without clicking on them (e.g. when an scv finish a building, when units spawn, etc. (stuff that has subtitles (e.g. you can't build here) always has sound)
unit acknowledgment = sound units make when you click on them.
building sounds = sound builidngs make when you click on them.
everyhing with animation you can't turn off separately. (e.g. units attacking, mining, tanks sieging, missile turrets shooting etc.)
edit: now i see you only asked for subtitles and that was answered before. I leave it anyway, because some people might find it interesting. (I only noticed those options when I saw larva turn off everything except unit speech on his stream)

I don't recall any blatant ragequits; one may be when Savior lost to FireBatHero, and acted like he wanted to break the door in his sound booth on his way out. In-game BM is somewhat common, although not in text. One example is Much vs. FBH, where he makes a heart in the middle of the map with Cannons and Pylons. Another example is Jaedong vs. FBH: Jaedong makes multiple "manner" Hatcheries outside FBH's ramp on Destination. "Manner" Command Centers also occur sometimes. Yet another example is Fantasy adding 1 Battle Cruiser to his army against some Zerg, Hydra maybe?, and dancing with it:

This is because Boxer said "my base is so small ;;" in a game, which made his opponent search like mad for proxies when there were none. Boxer won the game. They decided that mindgames with chat were not in the best interest of competition.
Before that, there was in-game chat at times but I don't think there were any personal attacks.

I recently downloaded the ICcup launcher, but I am unable to use any of the maps that were installed with it. The directory is completely blank accept for "iccup - circuit breaker"

In the case that you go SK terran with mines ( after +1 5 rax for example):
What should you do to prevent zerlings mine dragging? Would going (mass) firebats be a good idea or can they not kill zerlings fast enough to stop them from mine dragging/defusing?

Not if dark swarm is cast over the mines. And a zerling can drag a mine pretty far.

Seems like it'd just be more expensive units to get blown up ^^ And yes, I've seen/done Zergling mine drag over ridiculous distances. I'm curious if there even is a legitimate answer to this that would make sense in-game. When it happens, I just give the credit to the Zerg and move on xD

er...put your vultures ahead of the mines to snipe those lings? lol but eventually they will chase your vults off with main army and you cannot stop them from mine dragging eventually. or they just switch to hydras to go against mech transition.

If you want to make some DA and use feedback at least, there is room for it in every MU imo! The range for feedback is really long, it's a fast cast. As for Mind control, that's tougher since it's a costly upgrade + a lot of energy, but it's good for : lurkers, ultralisks, guardians or even a drone vs Z ; archon, DA, reaver, shuttle with things in it vs P ; vs T mostly for catching an SCV which is plain awesome. It could happen vs T that you catch a dropship with 2 tanks or 4 vults, or maybe a vessel and use some spell.. It's a technical unit to use and needs good planning and execution, but imo there is room for using it in all match ups, I really like to do that it's fun and interesting. Making tanks against terran is one of the most fun things I've done in the game ; as well as gaining an advantage stealing archons or shuttle reaver.
