Okay, so I initially had 3 pre-orders for 3 collector's editions at GameStop, but as of a few hours ago I've canceled 2 of them and just added the money put down to the 1 left. Stupid of me? Probably. However, I had recently bought 6 copies of SC2 (one was a CE) for $75 a few days ago so I couldn't justify continuing on with 3 pre-orders on top of the 6 packages. Yes, I know the CEs are going to skyrocket in value, especially since they're sold out now everywhere, as time passes.
Tip: If you live in San Diego and know where the UTC GameStop is.. ask them if you can snag my canceled pre-orders. I guess you could try telling them you know someone that canceled their pre-orders there recently. Each GameStop is limited to like 300ish CEs, from what the employee at the counter told me.
Anyhow, after looking at what's inside the CE again just now.. I probably won't even open any of mine and will instead use the regular boxes. There's really nothing inside the CE that sticks out as extraordinary. The in-game bonuses (avatars, decals, and thor skin) seem interesting, but I'm sure there will be much cooler decals and avatars available through achievements.

there are still CEs for sale a lot of places. There will be CEs available at launch.

I remember seeing a bunch of discounted burning crusade collectors editions and oblivion collectors editions at Fry's; there's no guarantee they will go up in value.

It seems dubious to expect that the CEs will go up in value. I suppose there might be some WoW nerds who are willing to pay a lot for the pet . . .
It might happen, but I don't know. Are WC3 / D2 collectors' editions particularly valuable today?
