Hey Mate, I lived in Spain about 20 years, so I might give you some ideas there. You might want to look for other locations in Spain (depending on your taste).
The typical places to see are: Granada (the Alhambra) Cordoba Sevilla
Benalmadena used to have a decent service of travels to see those places, and you get to be near the beach so if you dont feel like traveling (by bus) you can jsut lay on the beach.
However, I personally liked more other locations that are sort of countryside, mountain.
So first question should be: are you looking for exploration or relaxation? (AKA, beach vs tourism).
Asia has some of the most amazing places on earth, but its a place to go for 6 months, not a week. You will need a lot of vaccines as well, and those are not 100% safe.
Tailand could be great, especially for diving.
Anyway, let me know first what sort of holidays are you looking for.

I'd say that I'm looking mostly for relaxation but mixed a little bit with tourism (not visiting churchs, but some walking/good landscapes and stuff is welcomed) - I'd say 70%/30%. Also I'm trying to avoid 1500$+ / person costs and I know that just plane tickets to Asia are pretty expensive.

My recommendation is Koh Samui in Thailand. It's a wonderful paradise.
A long flight that youll probably do through München to Bangkok then either ferry or flight to the island but i guarantee it's so worth it. It's a superb island, gorgeous temples, healthy and super cheap food, nice people except for cab drivers, and if you sync your trip with the Full Moon party on Koh Phangan, that's a fantastic experience. Also riding elephants and stuff is pretty fun.
Flight is kinda expensive but you save a lot at destination, stuff is so cheap even though Samui is considered a more luxuryish expensive choice from what Thailand offers.
For this August im also considering Morocco like you, but nothing sure for now

I have no real idea what your budget looks like proper, so I am curious. A similar ticket from the states is like 1200 USD per person.

And from what I've checked the 8 days vacation offers are around 1000-1200 USD / person so that's ~3400 USD already. I think I'll have a budget of 2000-2400 USD for holidays to spend.

If you want to go to Croatia, here's a nice overview of the prices http://www.frankaboutcroatia.com/croatia-travel-costs/. It's getting more expensive over the years, but I think it's still fine. Going in September is a really good choice since the prices are noticeably lower.
So here are a few recommendations if you decide to go to Croatia. There are a lot of beautiful National parks to visit, e.g. Plitvice Lakes, which I would recommend to visit en route to the sea. Since I'm bad at general advertising, I'll just describe where I usually spend my summer - the island of Korcula. If you're interested in the cultural aspects, there's plenty to see there such as the old Korcula town (yes, same name as the island) or the Moreska sword dance. On the other hand, the landscapes are also great, I enjoy going on a hike to the inner part of the island. From the Korcula town you can also go for a one day excursion to the National park Mljet (read Mlyet) or to the Dubrovnik city well known for it's walls (be warned though, this city is very expensive). There are lots of beaches (including sand beaches) near hotels in the Korcula town, but I prefer to take a short trip to the south coast where there are a few "hidden" beaches since it's less crowded and the sea is warmer and cleaner.

Italy. Many Polish people like it here. Romantic and interesting. Just don' t get ripped off and enjoy your vacation

I went on a family trip to Croatia 2 weeks ago for 1 week and came back last week. Went to Plitvice National Park and Dubrovnik. Had a good time. Dubrovnik was very nice, as advertised. Definitely worth a visit if you haven't been there yet.
