i usually try to deep fry as much as i can, do you re-use your oil? i found that if the batter is really powdery it ruins the oil (kinda like the of your clip). so i try to batter it as much as i can and deep fry it. faster, crispier and more reusable oil.

yeah that's a good idea but I don't have a lot of oil to begin with. I just threw away the oil in the end, probably... 4 spoons of oil? I read somewhere over used oils give cancer, so I'm bit paranoid
edit: what do you batter it with to make it not powdery? Do you dip in buttermilk first then try to get a really thick coating?

Yeah reusing oil is definitely not healthy (or safe? not sure about that), that being said I have lots of black friends from the south and their moms would just reuse that shit over and over, so who knows

i just add water, i mix my batter with garlic salt and kfc powder instead of flour (can get that from any groceries). the kfc or any frying powder gives it that crunch and golden look.
re-using oil isn't that great, but i use large amounts every time, i don't see a problem given places like fish and chips are constantly frying stuff in the same oil over a regular period of time
