I've created a recipe from the PS3/PS Vita game Dragon's Crown. In the game, it's called Kraken Cacciatore.
INGREDIENTS
salt
pepper
2 teaspoons of red pepper flakes
1 teaspoon of olive oil
3-4 sprigs of fresh dill, peeled from the twig
basil, sliced into thin strips
4 cloves of garlic, chopped
1/2 of an onion, julienned
1/2 lb of mushrooms, sliced
4 vine tomatoes, diced (keep the liquid)
1 red bell pepper, julienned
1 cup of white wine
1/2 lb of octopus, chopped into cubes
PROCEDURE Prep time for this dish takes about 20 minutes. Cook time is roughly 45 minutes. This will make 2 servings.
Calories per serving: ~312 calories
Set a large skillet on high heat and add in your olive oil.
Saute your onions, peppers, garlic, and mushrooms.
Add in your octopus
Reduce heat to medium and add in your diced tomatoes.
Season with salt, pepper, and red pepper flakes.
Add in your white wine.
Add in your dill and basil.
Reduce heat to low and simmer for about 45 minutes or until the octopus is tender.
Eat!

looks pretty damn good, but the recipe calls for cubed octopus and the picture looks like almost halved, maybe full tentacles for some. would leaving it longer change anything substantially?

I'm not. I'm ethnically Chinese, but born in the US. I eat a lot of Korean food though!

It started out cubed in the larger sections of the tentacle, but since it starts to taper off, I just cut them into longer strips. I purposely left some tentacles longer for the photos though (like the one you see in the center of the photo).

That's why you simmer! Low and slow is the way to go :D Octopus seems to have a finer range between delicious/tender and overcooked/rubbery than squid.

octopus is rad, i need to eat it more. i had some kinda seafood stew appetizer at a italian joint recently that looked kinda like this + cod, squid, shrimp, etc. looks good keir.
