INGREDIENTS
- salt
- pepper
- 1 tablespoon thyme
- 1/2 tablespoon cumin
- 2 leek stalks, chopped
- 1/2 cup of white wine
- 3/4 cup of silken tofu (6oz)
- 1 cup of cauliflower, chopped
- 2 cups of chicken stock
- 1/2 lb bacon (if you're like me, you'll prob end up eating some of the bacon strips anyways... so compensate for that fact)
- OPTIONAL: dill
PROCEDURE Total prep time for this dish is roughly about 20 minutes. Total cook time is about 45 minutes. This will make 4 servings.
Calories per serving: ~350 calories
- Fry your bacon on high heat. Season with cumin. When the bacon is cooked, immediately remove from the pan and place on a few paper towels in order to absorb the extra oil.
- Once you've fried all your bacon, drain most of the oil from the pan (ideally, place it in a disposable can or cup because grease can clog your drain).
- Saute your chopped leeks in the bacon fat for about 1 1/2 minutes, or until golden. Season with salt, pepper, and thyme.
- Add in your white wine to your leeks. Let cook for about 2 minutes. Remove from heat when done.
- Set a large pot on medium heat. Add in your chicken stock. Add in your cauliflower. Season with salt, pepper, and thyme.
- Allow cauliflower to cook until soft (roughly 15 minutes).
- Pour in the leeks and wine from other pan into the pot.
- Stir to combine.
- Using a whisk or a fork, beat your silken tofu into smooth paste. Use the some broth from the soup to thin out the silken tofu and bring it to temperature.
- Add the silken tofu to the soup.
- Using a stick blender, blend the soup together.
- Crumble 3/4 of your bacon and add it into the blended soup. Stir to combine. Reserve the remaining 1/4 as a garnish.
- Pour desired amount of soup into a bowl. Garnish with crumbled bacon.
- OPTIONAL: Sprinkle dill over the soup
- Eat!

Cumin is one ingredient to curry powder. :0 There's sometimes coriander, cinnamon, cloves, turmeric, ginger, garlic powder, etc, depending on the region.

While this looks delicious, I gotta say, your seasonal timing is pretty off. Heavy cream based soups during a heatwave sounds like sweat on top of sweat

IT'S TRUE LOL. I actually made this recipe a while ago, but I never finished my blog post about it. It's only relevant now because I hit Paragon 100 in Diablo, and this was suppose to be a Diablo themed recipe.

It's been really hot though T___T' I'm from SF too, so I eat clam chowder all the time hahaha.

Cumin is the stuff they put in tacos to make them taste like tacos!
It's one of the most popular spices in the world. I use it all the time in soups/stews/chili. And then I usually just buy curry powder (or paste) when I do stir fry/curries/etc

Curry can have a lot of different spices (and there are lots of types of curry) -- I usually remember cumin as the stuff in taco meat that makes it taste like taco meat. Sichuan ("Szechuan") chefs also uses it a lot in their fried dishes.

i agree on tofu, and this dis hcould do without, though i personally hate the texture and taste of it in anything really. but you do the dish minus that, it's a heaping dose of creamy food porn
