I'm sorry for my super long and unannounced hiatus, but I'm somewhat back now. I think. I kind of halted the blog before because I was sucked into SW:TOR with an extra demanding guild. Sigh. I quit a while ago and now dedicate most of my time to Diablo and watching GSL.
Still floating around Platinum in SC2 though ... Anyways, enough about me. Let's get to the real reason you clicked this link:
SHEPHERD'S PIE
Ingredients:
Salt
Pepper
Olive Oil
Crushed Garlic
Rosemary
1 cup of Red Wine
1 1/2 lbs of Ground Beef
1 cup of chopped Carrots
1/2 Red Onion
1 cup of Peas
1 cup of mushrooms
2 lbs of Red Potatoes
1/2 cup of diced Celery
1 cup of (Soy) Milk
1 tablespoon of butter (margarine)
1/2 cup of grated cheese
Procedure:
Dice carrots, celery, mushrooms and onions.
In a hot pan, sautee mushrooms and onions in olive oil.
Lower heat and add in celery and carrots.
Cook until carrots and celery are soft. (~10 minutes)
Remove from pan.
Skin and chop red potatoes.
Boil in a large pot. Once potatoes are soft, strain potatoes. (~12 minutes)
With a fork, begin mashing the potatoes.
Slowly add in your soy milk, butter and half of your grated cheese.
Combine ingredients until you have fluffy mashed potatoes.
In a hot pan, cook ground beef in about a 1/2 tablespoon of olive oil.
Season beef with salt, pepper and rosemary.
Add in your 1 cup of wine.
Let wine reduce and beef cook; should take less than 7 minutes.
Remove from heat when done.
Pre-heat oven to about 375°
Place beef into a baking dish. Make sure the beef is spread evenly.
Layer vegetables on top of the beef.
Spread mashed potatoes over the vegetables.
Sprinkle with the remaining cheese.
Place in the oven until potatoes begin to brown (~15 mintues)
Remove from oven and let cool for about 5 minutes and serve.

I noticed you used soy milk with cheese and butter. Is there a reason for this or just a taste preference?
Just really a personal preference. I'm trying to limit the amount of dairy I use in my meals (I'm a little bit lactose intolerant). You can absolutely use regular milk, cheese and butter in this recipe. It'll probably taste better too.
Dude is that pineapple? shepherds pie is already delicious but the stuff i used to eat gives your recipe and pictures no justice, your an awesome cook!
Great recipe! There's a lot of good recipes on TL but this one fits in with my diet (low carb, just the potatoes), looks easy to make AND sounds delicious. Definitely going to be trying this.
One thing I notice is that you list garlic in the ingredients but not in the steps, which step do you add it during?
I like eating this without the potato as a simple stew / casserole too, or you could pop it into some lettuce wraps as well, this is at its heart a very simple and very versatile comfort food dish. 10/5 :D
