Yay! A vegetarian recipe!
RATATOUILLE
Ingredients
- Salt
- Pepper
- Olive Oil
- Crushed Garlic
- Tomato Paste
- Fresh Thyme
- 2 Cups Marinara Sauce
- 3 Roma Tomatoes
- 2 Zucchini
- 2 Eggplant
- 2 Yellow Sqush
- 1/2 Red Onion
- 1 Red Pepper
Procedure (super easy!)
- Preheat oven to 375° F.
- In a glass baking dish, spread Marinara sauce and Tomato Paste.
- Wash and slice your vegetables into 1/2 inch rounds. Julienne your onions, tomatoes and bell peppers.
- Begin to layer your vegetables, alternating between each type.
- Season each layer with salt, pepper and fresh thyme.
- Drizzle the final layer with olive oil.
- Place dish into the oven. Cook for about 45 minutes -- top layer should be golden brown.
- Remove from oven and let cool for about 5 minutes.
And you're done! :D om nom nom
I really didn't expect ratatouille to be this easy. @_@ It was also pretty delicious. I had about like 8 servings from this recipe. It's quite a lot!

Make sure that stuff really melts down into a slop. Don't go by your usual western metric of when something is 'done'.

First time i see a ratatouille with yellow squash in it, it's usually yellow sweet peppers (and red ones as you said), maybe that's what you mean? Also you are doing your recipe just like in the pixar movie, which is different from the way they're "traditionally"doing it in the south of France but it's not an issue. The proportions are not what i'm used to (6 tomatoes, 2 zucchini,1eggplant, 1red pepper, 1 yellow pepper,1onion), i also add 1 little scoop of paprika. I'm not criticizing your recipe ofc, just giving my opinion. I'll try your way net time i'm doing one gj

Traditionally, no. It's usually thrown into a big pot and cooked for a long time.

Yeah, mine is definitely not the traditional version of ratatouille. Hahaha, so yes, it's a bit similar to how they do it in the movie. It's similar to what Thomas Keller does: http://www.startribune.com/lifestyle/taste/recipes/15800917.html
I believe another TLer suggested making ratatouille, and mention they used or referenced what Thomas Keller did. So I looked it up and did something similar (minus the stove part). :D
