(Pictures aren't that pretty..unfortunately. I have no idea how to take pictures of things when they're in bowls. blah!)
Yam and Kale Soup with Turkey Meatballs

WHAT YOU NEED:
(besides salt, pepper and olive oil)
Soup
2 Yams
1 bunch of Kale (I don't know what you call that... just 1 thing of kale i guess.. )
1 box of chicken stock
1 can of cannillini beans
1/2 white onion
2 gloves of garlic
water
Turkey Meatballs
1 1/2 lbs of ground turkey (breast or thigh works)
1 table spoon of Worcestershire sauce
1/2 onion
3 cloves of garlic
a lot of parmesan cheese
1 egg
about 1/2 cup bread crumbs ( I used whole wheat)
Oregano (maybe about a tablespoon too)
NOTE: these measurements are very rough ): I never actually use legit measurements when i'm cooking...only when i'm baking! so feel free to eyeball stuff.
PROCEDURE
1. Peel the yams. cut them into small cubes
2. wash your kale and roughly chop it into 1 inch pieces.
3. chop all your onions and garlic! set aside amounts of the soup base and your meatballs.
4. in a large pot, sautee half of your onions and garlic.
5. when your onions and garlic are brown, add in your chicken stock, beans, yams and kale.
6. season your soup base with salt and pepper. add in maybe 4 cups of water or so.
7. Chill out and start making meatballs!

NOW THE HARD PART! Making meatballs... Prepare to get messy.
8. Preheat your oven to about 375º F (190 C i think?)
9. Combine all of the meatball ingredients into a giant bowl
10. Mix all the ingredients together
11. Begin to shape your meatballs into balls. You can just pick up wads of meatball goop and roll them into balls. If you don't like getting your hands covered in meat stuff, grab two spoons.
Scoop up the meatball goop into one spoon and gently shape it with the other spoon.
12. Put all your shape meatballs on a slightly greased (with olive oil) baking sheet or glass bakeware.
13. Cook meatballs for 20 - 25minutes or until golden brown.
14. remove meatballs and throw them in your soup!
By the time all your meatball stuff is done, your yams will be cooked.
15. OPTIONAL: sprinkle soup with some parmesan shavings.
Eat and enjoy your healthy soup over the GSL finals. :D
