If the race or ladder is not important to you, the gear or GR level doesnt really matter as long as you're pushing your character in terms of what he can handle without dying and/or hitting at the same enemy for hours on end. At least, thats what I find most entertaining.
That being said, I can understand how efficiency (quick clear) is wanted for specific farming, and how raw power (for higher drop rates) is also preferable.

How is this wrong, other than the Torment levels he's posting?
From my perspective as a hardcore player having played in 3 seasons...
At level 70 I play on T1 until I get a good 2/4 set damage dealing bonus. Back in the Akkhan's day this took a bit longer. Once I've gambled for good gear and build decent toughness I tune up to T3-T4 and start farming gold, max my gems and the like. At the same time I farm / craft an ancient weapon and then turn up to T6. Really just comes down to the #s I'm hitting really (for example last season I got Roland 4 set quite quickly and was doing T6 sub-20 hours in).
Once I'm at T6 I continue farming for mats and start farming / leveling up my gems (I'll farm them all at T1, usually). Once my gems are all at level 30 or so I'll push higher and constantly test the waters. At that point I'll just start fishing for a block and notice when I hit a strong gear wall and farm for more pieces.
But T9-T10 is not really comfortable for me until a bit later, maybe that's what you're getting at? Of course I can always use the Goldwrap / Boon combo to safely farm T10 with high damage. Then again I refuse to play a US monk...
This is all on HC, btw. If I was playing softcore I could expedite the process much more because I wouldn't feel the need to play safely.

I'm doing a lot more leveling than I expected to do this season. Got a monk (only one geared somewhat well, cleared gr58), crusader, wd and barb on max. I was tempted by the ww-rend build that is going on as I like dots alot. Got no major set boni apart from bul kathos weapons as of yet and while I always thought what a bullshit spec ww is with just flying through a rift I now have to admit that it's really relaxing and therefor fun.

I'm saying that cookie cutter builds aren't necessary at all to push above t8, that you can farm t6 very comfortably depending on what class you're playing with very little gear, especially in a group. Last season I was speed clearing gr 35 on my firebirds wiz set, which was at that time one of the worst builds in the game. Shit is so much stronger now it's not funny, pushing out t10 with a less then optimal build isn't that impossible.

Maybe, I guess. I am usually playing solo so I don't get the (absurd) benefits of group XP/farm all that often. Legacy sets pale compared to all the skill specific sets out there this season. And the nature of the game is that you are naturally pushed into using a set to get to end game content.
But farming T6 comfortably without some sort of set bonus to boost your damage or ancient weapon seems absurd to me. And by comfortable, I mean clearing easily and not yo-yo'ing HP constantly (SC problems), etc.
I can see farming with firebirds at GR35. But that's still a set, even if an archaic one. The design of the game naturally pushes you towards a set to progress, which is what he's getting at.

I also disagree that you can't play higher than t6 without sets/legs. There is a forum where "best" people accomplished grift lvl40 solo in time with only yellow items.
I finally play hota barb since yesterday. I find somewhat weird that I need 7min to clear grift lvl40 AND grift lvl52 oO The real killer is my non ancient gavel (3200DPS) -.-

I've reached a point where I'm fairly convinces that the gavel does not actually come in an ancient version... I have gotten both WW weps as ancients before I even saw the regular gavel and have yet to see another gavel - even regular - drop.

Grifts can be really screwy and misleading when it comes to times. You could get a shitty 40 with crap tiles/mobs and take just as long as a 50-55 with good times/mobs. I'd say 85-90% of the time the tile set and mobs you get influence your time more than gear and paragons do. There's roughly a 2-5 minute time swing you can save or lose on most rifts from the tile/mob rng.

I'm not sure i like the fact that you're forced to use full sets since the 6-piece bonus in most of them is so good that anything else is not viable. It just takes away the chance to create cool builds since no matter what kind of crazy shit you're going to try it's not going to match against the 6-piece bonus, not even close. What i'm getting at is that gearing your char gets boring real fast. You just get the set and the season bracers (+belt) that miraculously has crazy synergy with the set along with a weapon and shield that also goes with the set and you're done. Took me 1 day to get the cookie cutter items for my DH and half of them are ancient already. To no surprise i'm missing ancient weapons on both my chars and farming 5k+ deaths breaths for them will be a blast i'm sure T_T

Boosted a random newbie yesterday to 70. Then i feel like being nice and i boost him through some t9 rifts. 2nd or 3rd run gave me double puzzle ring+furnace for him to cube. Needless to say he was stunned and likes me very much now xd

I was using 6 piece and 4 piece bonus for awhile this season with the ring. There are a lot of possibilities, but I also do not like the way the set bonuses work. I wish they were more gradual...say the 250% warrior one for having your two timers up at the same time. Why not make it 50% at 2 piece and add 50% for each piece all the way up to 6. This gives you so many more options it would seem. IDK

On your helm, reroll ancient spear to crit or ww dmg depending on how much crit you already have. also, you can't use gifts on gear, only weapons. You should also reroll your offhand weapon damage to socket for another gem and craft some Reapers wraps for bracers. Your character is indeed starting to come together but you still have some room to improve. :D

Can't Gift armor only weapons, as above mentioned. Consider rerolling the Life per fury to life% in belt? Someone else can comment, I don't know as much about life per fury but I like the static toughness personally. Your rings look pretty GREAT for now, while having to rock RoRG, very nice. That CoE will go a long way. If you find your toughness lacking, which you shouldn't, you can always swap a purple gem into your helm. I also agree with rerolling your offhand for a socket and another big emerald, one of the great parts about dual wielding that makes up for the other disadvantages, or you could just throw a gift in it if you have as many as you say and don't mind blowing one on a non-ancient.
All in all that set up looks WAY way sicker than last time around, and you should definitely be stepping up a few levels in torment as you'll find the first time I got the 6pc wastes bonus I was laughing and having a blast rolling around vacuuming up everything. Cheers :D
Edit: I too recommend a decent reaper's wraps. They become super convenient if you're doing anything speedy and just want to keep moving and killing shit and not pushing super high GR progression

So I finally started running bounties and cubing stuff, all that end game stuff. I'm wondering how the Hope of Cain works exactly - do I have to know the exact item type like Heaven Hand vs Spiked Fist (and if I do, where I can find out what Leg is what). Also is it leg only, no sets? So no hoping to get my Shenlong's fists from this?
Also, I managed to get Master rifts under 10 minutes last night (~350k dps). I can't one-shot blue/yellow mobs yet, but I was using Sebor's Nightmare and just running from chest to chest to explode all the white mobs for big % gains (plus it aggro-ed all the blue/yellows too). So far it seems effective.

You can get sets from this recipe, i got F&R (focus and restraint) from cube, you don't need to use specific item, but it has to be item type (for example if you want furnace you need to use 2handend mace, you will roll one of legendary ones. You can use battle net's game guide to check which type of item you need to use (for example i googled furnace http://us.battle.net/d3/en/item/the-furnace and it says "Legendary Two-Handed Mace". Also on the right you see all the legendary maces, ie potential effects of your recipe).
