I like the OPs ones better, although it still hurts my eyes if I look too long.

Really cool! TL one is sick.
And there are machines that print out portraits, but something that takes effort is so much cooler, such as this.

Ok seriously though, I really don't mean to rain on your parade, but I seriously doubt you spend hours on these by hand.
There are so many online programs that do similar work at similar quality. This site provides decent results: http://lunatic.no/ol/img2aschtml.php. Obviously, these websites limit the output size of the ascii art because of server load, but the source code for many of these programs (in C, etc.) is freely available online (http://sourceforge.net/projects/jp2a/), and it wouldn't be hard to modify it slightly.
I'm going to call bullshit on your "my father taught me how to do this painstakingly by hand when I was eleven" story, unless you mean your father taught you how to program one of these jpeg to ascii art converters and you then wrote one up. While it doesn't detract from the quality of the artwork, at the moment I'm inclined to believe you're just being disingenuous until you can convince me otherwise.

Look, there's Einstein. Did the author of that picture also have a father who taught him how to place ascii characters by hand, or is it more likely that he simply used an automatic program? Same goes for you. Also, I doubt you can make a career out of doing this. Mind giving some links to where we can buy your work?
Basically this: is it possible that you did these all "by hand" by typing out each character individually? Certainly. Is it likely? No.

Well i can give you a step by step on what i do. If you would like
1. find an image on google you like.
2. Go to photoshop and upload image.
3. use the tools that help you outline the image. (use this if you don't already know how http://www.createblog.com/photoshop-tutorials/56-outlining-images/)
4. Fill in parts with symbols, or Letters of your choice (but make sure they all fit correctly)
5. Use Photoshop to edit additional lines as you see fit.
6. Make sure you correctly put the pieces together (use Photoshop's cropping and edit tools to help you: Better understand for tools use this site like i did (http://www.tutorialboard.net/toolspanel/)
7. It'll take some time and patience to get use too but i'm sure with these directions anyone can make what i make.

What is the purpose of the distorted aspect ratio? Wouldn't it look better with the correct ratio?

well im doing the pictures i found on the internet and whatever the outlining gives me i fill in tbh ._. Nothing ever comes out just perfect :|

These are definitely better results than any ASCII art program could give. Great job. My only suggestion is to try working with smaller resolutions, like 79 width, and try to get a similar result. Increase the difficulty!
