Note: Do not spoil past what I've watched in comments! Use spoiler tags if you do. I'm up to season 2 episode 24. I spoil up to that point.
Coming close to the end of season 2 of Deep Space 9, and I must say the show has grown on me. The characters are slowly developing more and more and there's been a decrease in focus on Sisko in the past few episodes, making it a much more interesting. Also I got to see Kira in some skin-tight black nylon suit (alternate universe) that looks suspiciously like the clothing worn by the ghost-hero in the aborted "SC:Ghost" game.
The big news is that the Dominion is coming up soon in the finale, just a few episodes away. I've been told that this is when the series really starts to get good, so I'm looking forward to it.
Oh, and as people have been mentioning, Garak is indeed one of them most interesting characters in the series. I don't know much about him: he seems to be deliberately kept as a mysterious character, with his loyalties and past (beyond being part of the Obsidian Order) at some level largely obscured. Gol Dukat is another well acted character with an unclear profile: he seems to be "nice" for a Cardassian.

It starts to get really amazing once Worf gets on the show and Quark becomes more of a main character. Season 6 is so goooooooood.

For me this is where the series went down the toilet. I think the whole dominion thing was just a way to keep the show running. In the later seasons the show became all about warfare and shallow subplots, and for me this is not what Star Trek is about. Did like one story tangent, don't want to spoil anything but they do really develop the Ferangi in a good way. It's still worth the watch, but if you're hoping for something as good as Next Gen you may find yourself disappointed.

I thought a lot of the Garak episodes were great. In the Pale Moonlight was one of my favorite episodes of any series.

Finally watching it in a linear fashion, nice and focused (since this time I'm not skipping my morning classes and catching it randomly.) Didn't think Bashir would become one of my favourite characters. Garak is probably my favourite, but Dukat is up there with Bashir. I really like Sisko, too, no matter what that dude in the other thread thinks about his, "staccato" -- which I have no problem with; I could see it working very well with his position.
Nearing the end of season four now. + Show Spoiler +Still waiting for the full-fledged war to break-out, as I don't remember much at all regarding later seasons since I didn't see many episodes, especially not in sequence.
