I've played Thief 1 and 2 SO many times, I can pretty much tell you where all the loot is on any level by now. Played hundreds of fan levels as well.
In my opinion, 2 is better than 1 simply because I like the atmosphere better. 1 is more medieval, 2 is more renaissance. 3 is awesome too, but I haven't played it nearly as much unfortunately.
Ontopic, I love sneaking games. Personally I feel Thief is the number one for this, and when you finish them, download some fan levels.
But other than that, I can always ninja around in
Aliens vs Predator 2 + Primal Hunt (LOTS of sneaking when you think about it, except for the human campaigns)
Morrowind
Splinter Cell
Deus Ex
Baldur's Gate 2 (if you count that)
Outcast can be kinda fun to sneak around in, but it'll take ages that way.
