Once you're halfway trained, they become pretty straightforward, and as you approach 510 EVs they're basically a snooze-fest (as in, when you're past ~3/4 trained, you can beat most of them without even bothering to dodge the shots and just shooting the targets).

That's what I did.
Also, hitting the grey punching bag (as in, without having selected a special bag from training) gets you random drops. One of those drops is the Reset Bag, which is a FULL EV RESET. I'm going to be saving those up (and it's a shame you can only have 12 bags at a time).

How are the online systems like battle and trade? Is there a skill rating for online battles?

Nice. This makes it a lot more flexible for different builds on one pokemon, as opposed to training another one again.

I've been refreshingly under leveled, though it has a bit to do with me having a full team of six Pokemon since just after the first gym.

Lol. Finally got myself a EV Reset bag - On that note, I finished up the entirety of the training regiments - if you're curious about all the super secret training sessions, look in spoiler.

1. The two fully evolved forms of the XY Fossil Pokemon - getting record times nets you stardust 2. Venasaur- getting record times nets you stardus, 2:30+ time increases chance to get Leaf Stone 3. Charizard- getting record times nets you stardust, 2:30+ time increases chance to get Fire Stone 4. Blastoise - getting record times nets you stardust, 2:30+ time increases chance to get Water Stone 5. Stunfisk, evasive/hard to hit training - getting record times nets you stardust and Hard Stone 6. Aegislash - - getting record times nets you stardust
Lvl 2 Secret Training 1. "An Opening of Lightning-Quick Attacks" - Roserade; getting record times nets you stardus, 2:30+ time increases chance to get Shiny stone 2. "Those Long Shots are no Long Shot" - Gallede; getting record times nets you stardust, 2:30+ time increases chance to get Dawn Stone 3. "Scatterbug Lugs Back!" - Scatterbug's three stage evolution. 4. "A Barrage of Bitbots!" - Probopass; Hard Stone in record time 5. "Drag down Hydreigon" - Deino's three stage evolution. Resets points to 0 if you're hit even once. 6. "The Battle for the Best: Version X/Y" - Aron's three stage evolution with Mega Aggron at the end. I got stardust, leaf stone, hard rock so far in record time.
Finishing both tiers of secret training and getting all 30 record time medals gets you a little laurel of stars underneath your "Super Trained Pokemon" icon. Every time you beat another training session (after resetting or not) you get a "As expected of a super trained Pokemon" dialogue.

Hey guys, there's already a mystery gift available. I just got a Torchic with its hidden ability (Speed Boost), and a mega stone. It says on Serebii that it will go on until January 15, so don't worry if you don't have the games yet.

Some people mentioned that there's a "wondertrade" thing, where you trade for a random pokemon. Why hasn't this been flooded with crap and common pokemon, so that people receive crap and common pokemon from it?
It sounds exactly like the market for lemons.

Well, give Reddit a month and it's an excellent place for obtaining bidoof's. Got today a Kelceon for my bidoof which was cool aside the fact that the japanese guy called his Kelceon "Vag!nator"

Overall I feel like there isn't a lot of power creep this generation; although that might because of the nerfs to various moves, weather, Steel and the introduction of Fairy.
