I only got to play for about 1h30m last night but i made no progress, just souls and levels. I got owned like 4-5 times by the big centaur boss in undead area, and the black knight guy like 4-5 times as well.
I'm having a hard time using my special attacks.

The game is just really hard. The first time you play, you will make many many mistakes and die, the creators want you to have to learn from your mistakes (as one person put it, the learning curve is a dying curve).
My 3rd party controller also doesn't do those special attacks well, they only work about 1/3 of the time, but they really aren't necessary. Jumping attacks do give you some extra reach, but the recovery will often screw you if you miss or there is more than 1 enemy. Kicking is mostly just for kicking away shields, which can be done with any strong weapon blow anyway, and doesn't work in new game+ with just one kick, so it's really not useful/necessary. There is so much more to the moveset than jumping attacks (anybody remember playing jedi knight 2: jedi outcast online? heavy stance jump attack duels were 90% of what happened, and there's no variety in it, though it was a excellent game).

How do Talismans and Catalysts work with spells and miracles? I see there are different ones, but how do they influence the damage/healing done/etc. of the abilities? I see some physical damage on them, but I guess that's not it?

The MagAdjust (Magic Adjust) stat is the one you need to look at. This stat is what determines the power of a spell, a higher number means the spell does more damage/healing. The different tools have different scalings and max magadjust that can be achieved, so it depends on your int/faith level as to which will be the highest.
Spoilers follow as to which are best at what levels.
There is 1 catalyst(possibly a second now) and 1 talisman that do not scale, the Oolacile Ivory Catalyst(there may also be an Oolacile Catalyst now, haven't seen it drop yet though, I think it's the same but has poison damage on attack) and the Thorolund talisman; these will have the same MagAdjust at every level of Int/Faith, 180 and 165 respectively, and will be better at low stat levels(<27).
After that, the starting equip tool becomes best until lvl 40, the canvas talisman, and the sorcerers catalyst/beatrice catalyst/izalith catalyst(all three same at every level).
At 41+, the darkmoon talisman surpasses canvas, and Logan's catalyst surpasses sorcerers/beatrice/izalith. The Tin Crystalization Catalyst is stronger than Logans as soon as it is available (32 int), but it halves the number of castings. I don't know much about the new Manus Catalyst except that it also halves castings, is stronger than logans but weaker than Tin Crystalization, and boosts the power of the new dark spells to be even stronger than with tcc though weaker with all regular spells.
Magadjust gains after 50 Int/Faith are very minimal, sometimes as low as one magadjust every five levels. Would not recommend going above 50, just like other stats.
There is also a catalyst that scales with Faith(Tin Darkmoon Catalyst) and a talisman that scales with Int(Velka's Talisman).

On the first boss in undead bour or whatever it's called the tauren demon guy right outside the portal are skeletons in the high tower that shoot arrows at me the whole time. I don't know how to kill them so I just try and kill the boss with skeletons shooting at me the whole time. Is this intended or can I kill them somehow?
I'm a bandit if that means anything.

There should be a ladder on the side of the tower, I think.

There is only 1 unreachable enemy in the game I can think of(dragonslayer bow giant skeleton in tomb of the giants). Many ranged weapons will be just be found lying around, sometimes in slightly hidden places through the game. There is a merchant you missed that sells a short bow, near the first bonfire in the burg.
The ladder to the right of the entrance to the taurus demon boss will let you reach those crossbowmen, and also let you really put a hurting on the boss+ Show Spoiler +Try a plunging attack. Don't wait too long though, as he will jump up there eventually.

You can buy the bottomless box from the undead merchant in the first part of the burg to store your items at fireplaces. You can sell your stuff to a certain NPC that appears in Firelink Shrine after youve rung both bells. You'll know him when you see him. He's hard to miss.

This happens a lot in the Darkroot forest area, just past the Crest of Artorias door. It's my favorite area to PvP and get invaded, but it fuckin' blows for this since the "white-fogged" area for this zone is massive in that respect.

You are pretty lucky. You are supposed to climb up the tower in the beginning first kill the 2 skellies there. Then make the boss come out and run back up the tower. Do the plunging attack 2 handed grip with pine resin. That will take off like half of taurus demon's hp. Then just dodge his attacks climb back up again, rinse and repeat until he is dead.
However if you are lucky in getting the black knight sword before the fight and have the stats to use it. You can literally one shot the boss from the plunging attack using 2 handed grip.

Depending on your class if you can kill him in like, 6-8 swings without any gimmicks lol, 2-handing of course. Not too difficult. But of course you can also climb the ladder.

Plus, I killed the Taurus Demon by throwing a bunch of Firebombs at him.
