It was exciting ^_^. That invader is actually an NPC lol, Maneater Mildred. There are a few of them strewn throughout the game (some more than once). I'm guessing they're supposed to simulate/represent the feature, in the same way that you can summon NPCs like Solaire and others to help you.
The red invader NPCs are usually very useful to hunt down and kill, because they either drop useful equipment (and souls) and/or will be available to summon for later fights, like Mildred.

That wasn't actually a player, that was one of the 5 npc invaders, maneater mildred. She's pretty easy to kill. The dragon crest shield I like to use has 85 fire on it too, but yours is the best one for fire.
2 handed grip is actually arguably better than 1 handed, because dodgeroll>shielding and having +50% str is useful. Knight Artorias in the new area kicked my ass about 20 times before I realized I shouldn't be blocking him and switched to dodging and 2 handed grip to take him down easier. And then he kicked my ass a couple more times still until I realized it's easier to dodge him when he's closer rather than farther.

So far it looks like the entire game is like that. Part of getting more skilled with the game is getting to know your enemies, their attack patterns, their weaknesses and strengths, and finding solutions to those problems. It seems like everything in the game has an intentional exploit/ridiculously strong counter, etc. Sometimes (as in your case), you find those things by accident, making certain things very easy.
I love that about the game. I'm pretty sure when I start a new game, I will stomp through it quite easily. Not because I farmed some imba equipment, but because I know my enemy a lot better now.

What is wrong with this game 
It went from really bad performance to smooth with highres patch at 1920x1080 (after patching nvidia drivers, had really old ones because the later ones bugged out on me)... and now its worse than before, slideshow at 1600x900 with no AA or Motion Blur. Why!

As far as I know, each ember can only be given to a specific blacksmith. There's no reason not to give it to them, at all.

The upgrades specialize your weapon in a certain way. Divine/Occult is for Faith scaling, Magic/Enchanted is for Intelligence scaling, Fire/Chaos for Fire damage/humanity scaling up to +10h if you go chaos, and Lightning for lightning damage(Lightning/Fire weapons do not scale off stats, besides chaos with humanities).
Going Occult or Enchanted increases the scaling on its respective stat but decreases the other scalings even further. Raw and Crystal are just bad, slightly better base power than a +10 weapon but at either reduced scaling or reduced durability+no repair, so going +15 is better.
Enchantment spells like Great Magic Weapon only work on normal weapons(or raw, but don't use those), and a select few unique weapons but not most of them. Also divine(not occult though) weapons make skeletons stay dead if you haven't killed the necromancer, but they aren't necessarily required if you just run through and kill them off since the necromancers don't respawn.

I need some advice. I just killed Gaping Dragon and my main weapon is broken, plus I'm cursed. So far, Blighttown seems insanely hard because my weapons do terrible damage, plus I get one shotted by a bunch of stuff. I desperately need to repair my weapon, is there any way to do that in Blighttown?

not in blighttown. Your best chance is to run to the water wheel and go up that way to firelink or if you came from the depths and only got the bonfire on the bridge in blittown you might wanna consider going back the way you came.
you can heal curse with an item the merchant sells in the sewer that links firelink and undead city
an item so you can repair yourself is sold by the blacksmith in undead parish

As the other guy said, going up the waterwheel is the fastest way in/out of blighttown(key at top of last ladder in chest). If you run out past everything it will be quite easy to reach blacksmith and the female merchant near undead burg who sells purging stones, and you can use a homeward bone to warp back(she also sells those), or just go back down the waterwheel. If you are getting one shotted, you probably need to upgrade your equipment some, or possibly level up a bit(upgrading more important). Also, use dodge rolls to your advantage to not get hit.

I stagger him with a Wrath of God and go for a backstab. As he's getting up I charge an Emit Force which hits and my Darkbro was charging up a firestorm which hit him straight after.

Whenever you feel really weak in an area, always look at your gear and weapons and consider if you may want to upgrade it. If you're in blighttown, your weapon should be at least Regular +5 and your shield should probably also be upgraded a bit. Upgrading your armor is generally not worth it though, unless you're certain you want to keep using it. Leveling of course makes it easier if you feel enemies hurt you too much.
Above all though, remember that there's no such thing as "too low level" etc in Dark Souls. As was posted earlier, you can beat the whole game as level 1 without armor, the only exception is your weapon which you will definitely have to upgrade as you go along. So if you feel your gear is actually ok (+5 weapon, decent shield and armor), work on your own ability instead. All attacks are avoidable.
Btw, how did you get cursed in blighttown, I have no memory of enemies cursing you there... unless you went to the tree area, where you're not supposed to go (unless you want to, it's a pretty difficult area, and optional).

Everybody is guilty. If someone indicts you for invading, that sin will only be cleansed by being killed by a darkbro, unlike the other sins you can cure with absolution, and it seems like everyone indicts invaders.
