Be careful and make sure to manually save your original character. I used to only quick save (f5) and I started a new character for fun.. I lost my lv29 d/w nord with full daedric 100 smith/enchanting etc because Skyrim save management is shit and it saved over my guy.
Thank god I have PC version and I had an old lv10 save.. I 'cheated' and gave myself full bags of mats to relevel blacksmithing/enchanting and power leveled back up to lv25 doing that and recrafted my gearset. I still have to redo about 3-4 hours of quests though a lot of the little knick knacks and dragonshouts I'm missing now.
Just Save/Load using console and you get the best of both worlds plus the ability to name your saves.
for example open console with ~ and type "save savename" (replace savename with what you want to name your save) and then you can use the "load savename" command or load using normal menu. For quicksaves i use save 1, save 2, etc. and for hardsaves I use the character name as the savename.

Yes she can, which is the only reason I don't do this with any of the companions I've gotten, cause I don't reload saves if something doesn't go my way, only for deaths/bugs. Not sure if the body would just disappear but I'm not willing to take that risk, I think as a mage I'll just dump some points into stamina every now and then.

Noname dark brotherhood guildie that you can get to follow you after you complete that questline is unkillable FYI, found that out when trying to get the bonus on the Ebony Bade using her.

I found that the game is more realistic than typical games because the arrow has to actually hit the shield to be deflected. If their arrow hits your feet, for example, you aren't going to auto-deflect it with your shield. So it shouldn't matter if you're in 3rd or 1st person, what matters is if it hits your shield or not.
Here's the thing though. When it's in first person, you never get hit from the front with arrows with the shield up. Or at least, I've never been hit. But that's just me. Guess I'm going to have to find the biggest shield ever.

I play exclusively in 1st person and I've been both hit by arrows, and deflected arrows. I'm only speculating that it would be the same in 3rd person because I don't play in it.

I allready had 2 kids who send head hunter parties after me who tried to kill me. And that was on level 3 or so so right in Riverwood it was fucking disgusting I tell you. Especially because I didnt know the name written on that bounty letter until 20 levels later I found that kid running around. And I didnt even do anything to the kid. Might have talked to it once or so.....

The only way your companion will die in combat is if you kill them yourself. If the enemies "kill" them, they drop to 1 knee for 10 seconds or so like an important quest npc, and then get back up with a sliver of health. (compared to quest npcs having full health)
