We all know it's going to be a third-person shooter with some dialogue options. If you want to call that an RPG, that's up to you I guess. I'm going to play it knowing exactly what it is. ME2 with the bloody misson report screens was just the first step.

I agree that the model in the trailer didn't look that great, but why the hell would that matter? -.- I mean... you make your own model, regardless of whether you've been playing with the default appearance or a customized one, you'll still be able to change whatever you want to ME3 just like you the others, not to mention that they've seemingly increased customization x10 in many different aspects of the game, I'm quite sure there'll be more options in the character appearance designer as well.

It was the result of a poll Bioware hosted a while ago.. I think a lot of people just didn't connect with the original femShep (unlike the John Shepard). Personally, I like the newer femShep better than the older one.
There are demo codes all over the place (reddit!) already for console access, i've played the demo on the xbox.
It looks sexy It feels way more action orientated (in the action areas.. fast pace, moar explosions) If you ramp up the difficulty it is actually damn hard
One thing that stood out above all the rest for me was the music/sound effects.. absolutely SPOT ON amazing.
