The original plan was to have Kaido go after DF and make it have to flee in fear of him after all. Also, having DF control Laws power through his strings seems either a bit too OP, or just a bit too..."complex" (for lack of a better word) of an explanation if you know what i mean?

I was about to say the same thing about Law/Kora/Dofla... We don't know if Law needs Dofla alive in order to reach his goal. Also, there's the possibility that Law ended up remembering something due to the Hobi Hobi No Mi going off. Dofla being a puppet there is also possible or maybe it's Kinemon D: I don't think he's dead yet, and probably will catch Kuros offguard with some bullshit in a way that Kuros remains being a total badass instead of turning out to be fodder vs Dofla.

Doesn't Law have sea stone handcuffs on? How could he use his DF at all?

I don't think Dofla is dead. I also don't think he is a Logia. There is presedent for Paremecia and Zoan fruits to have "Logia-like" properties. Buggy is the most obvious example, with being able to get cut up and reform himself. Even Moria could pull off Logia-like stuff with switching places with his Shadow, like when Robin tried to snap his neck, or afterwards avoiding Sanji's kick. Devil Fruit abilities are only limited by Oda's imagination, so I'm looking forward to how this plays out.
It would be really unexpected and awesome if a villain could be off'd like that, but this is also a Shounen Manga, and I think it would be more awesome to have Luffy beat him in some epic showdown like with Crocodile or Lucci.

Do you actually believe that any important character be it hero or villain is actually going to die? Out of everything that has happened in the manga and all the injuries suffered there have only been 3 deaths..... Not that I disagree with your overall point but there have been 89 characters that have been shown to die in the series - quite a lot more than the three you claimed.

I'm fairly certain he can sow himself back together. Luffy's gear 2nd is based on the fact even his blood vessels are rubber. So it makes sense that the same concept applies to DD, allowing such an ability. As much as I hate to bring up this character, remember Enel restarted his heart at one point, so this could be a similar situation where even though he really did take the damage, he won't stay "dead." The beheaded DD being a puppet is completely plausible as well. Either way, I think that this scene is Oda setting up to reveal the abilities of his devil fruit where we get a cliched "haha I am a string-man blah blah explanation" speech.
Also, I'm all for killing off major characters, but there are better ways to do it.

I think this chapter'll work as a setup for Doffy backstabbing Kyros, earning some more reader animosity in the process (though I totally like Doffy, that little speech in Marineford about justice was pure gold).

Its better for Doflamingo to still be alive and get a legit fight with Luffy, imo. I want him to go down to something like a Gigant Storm. With the anime version playing something like Dvorak Symphony No. 9 while he does it.

Everything about luffy is made of rubber down to his heart and his blood vessels. What would be so surprising about everything about mingo being made of strings.
It could be similiar to how brook (also paramecia) reattaches his head. We already know the strings are hard to see but strong as hell with number of strong characters we have seen being unable to break free (sanji, joz, law)
At the moment when his head was cut he connected the two parts of his spine with several strings which linked them together. And being strongs they bent out of the reach of curos' sword's reach.

The best theory is that the " DD " that was decapitated was just a fake.
And the real " DD " is probably a whole different person who is a Celestial Dragon wearing that stupid bubble spacesuit. But I doubt Oda would dare to go that far.

and of course sabo can break the arena he is the same level as luffy or more and im sure and elephant gatling would of made short work of it.

Plot twist: Dofla is actually a Tenryuubito controlling a puppet. But the puppeteer is located inside the puppet, like sasori in naruto.
Or Oda has taken a page out of Game of Thrones, which would be sudden. Hell, I can't wrap my head around this chapter even after a good nights sleep. Please tell me what the hell is happening.
