Water in general hardens Crocodile, but you guys are also forgetting he has the ability to suck out moisture and dry up water, as well. Its not like the existence of water makes Crocodile auto-lose or something lol

Exact words are important. "Near" is not the same as "in" and Sentenal's statement is fine. Crocodile was still quite effective while attacking a marine battleship right after escaping Impel Down. He was literally on the water. Crocodile was also somewhat effective during the Marineford war. Again, he was right on frozen water and surrounded by a huge amount of water. In both cases, he was near water.
If he could catch Arlong out of the water (like on a ship's deck), he would likely be able to dry Arlong up with one touch and that's normally a death sentence (hence why Crocodile walks away from Luffy after doing it... people aren't supposed to survive it). The only way Arlong would beat Crocodile is by staying in the water and eventually getting Crocodile to fall in.
And yes, I agree with Incognoto. Zeff (Sanji's chef teacher) pretty much said it explicitly when Luffy fought Don Krieg. Luffy has a single spear that's more powerful than all of Krieg's weapons. That spear is his willpower and it will overcome powerful enemies who lack it. Over time, that willpower seems to have manifested itself as Haki and only those with strong enough will are able to use it.

I disagree in Arlong being that strong. Luffy handled him quite easily actually. He even clowned around and got a set of teeth from Arlong and tried to bite him. He was just trapped under water for half the confrontation though.
The series made a point out of at least Zoro training constantly in order to become stronger. So saying that Arlong was strong enough to beat Crocodile at the time Luffy beat him is very far fetched(if we ignore that fishmen may or may not use water out of their body as a weapon).

I think Arlong would certainly give Crocodile a run for his money but ultimately would lose considering Crocodile WAS a shichibukai.

Luffy took some serious damage against him compare to Mr.3 who he beat without taking a scratch
also Arlong was able to make Zoro and Sanji look like chumps
Arlong is probably between Mr.1 and Croc in terms of power, i dont think he could beat croc but anyone below croc he could
he even joked around with Croc (water luffy)

I don't know if we're reading the same thing here. Arlong says "I have to kill him right here, right now!" & "I can't afford to let this man live!". Scared may not be the most accurate word here but from those two lines alone, it's pretty clear that Arlong is extremely intimidated by Zoro. So yeah, I wouldn't call that Arlong making Zoro look like a chump.

he had Zoro in his hands, Zoro was covered in wounds why would Arlong be afraid? he never showed an ounce of fear once the entire arc

He was intimidated. He said "I cannot afford to let him live", indicating that it'd be bad for him if Zoro did live. Now, how would that be bad? Because Zoro would come back to whoop his ass. He wasn't intimidated by zoro in his weakened state, he was scared of how strong he could potentially be if he was healthy
