To give this post some real meat, I'll give a short review (note, some spoilers ahead):
As a recent first time reader of Berserk, it's quite odd. The Golden Age arc is so awesome and the anime definitely got it right in focusing on that arc. The anime did an amazing job (and is the way I originally got into the series) even if it didn't fully do the arc justice. The series continues reasonably well through The Conviction arc, but definitely has some low points where it doesn't quite feel like Berserk.
By the time we get into the Hawk of the Millennium Empire arc, the whole thing really feels different. Once Guts creates his little band of heroes, it feel like an edgy Inuyasha rather than Berserk. We do get an occasional reminder that we're still reading Berserk, but it's only fleeting reminders and the Fantasia arc doesn't seem to be making any improvements. If anything, it's feeling more and more like a typical Heroes vs Demons manga and that's not what I originally came for.
It's still not bad and I'll keep reading until the series is over (will need life extension technology); however, I don't impatiently wait for the next release like I would have during earlier arcs.
I kind of wish the entire series started with the Golden Age arc and then extended the time that Guts left the Band of the Hawk where he would start to get into the battle against demons. And then we end the series, one way or another, during Griffith's attempt to ascend.

The series is only around 2/3's done, so there's a lot of progress to be made to round out the story. I don't really mind the fantastical elements introduced now, you have to remember that it's Berserk. If you feel like it's getting a bit too lighthearted or comfortable in its new skin, you're probably about to have another + Show Spoiler + pulled on you.

My favorite arc was the Golden Age arc where Guts was the most human. When he stood against 100 men to protect Casca, it was one of many high points in the series. He was also at his most vulnerable during that arc, where just overhearing Griffith say that his soldiers are not his friends had a major effect on Guts.
I think my issue with Berserk is how magical the world became. The Golden Age was almost realistic, but very dark with some demonic undertones. The whole series was about humans and their frailties, even for Guts and Griffith who both seemed nearly invulnerable in some ways. Then the whole series shifts to Guts vs Demons. Even then, at first there's the constant wimpy demonic harassment which is more psychological than physical and then big boss demons that Guts needs to push himself to his limits to overcome while being unable to save anyone around him. It was still about humans and their frailties. However, the further we get, the more it becomes about legions of demons all over the place and Guts just crushing through along with his band of magical heroes. Even the biggest baddies don't seem scary anymore because the series switched tone as magic spread far and wide and the series became less human. Gut's emotions for Casca almost seem out of place by this point (and that's probably what you're noticing) whereas the exact same feelings would have fit in perfectly during the Golden Age.

I've never read manga at all but I watched the berserk anime and it was frickin' great! Should I start reading the manga for this?

You should, just be warned that the later releases are super staggered out, and have no real schedule to being released lol. If you havent, you should also watch the three movies that came out that covers the Golden Age Arc.

These movies are canon, right? I don't think I'll watch them if I stumble across them in the manga.

Still surprised this is a manga / anime, i always remember the dreamcast game as i saw it while on holiday visiting my mothers friends when young - it was pretty fuckin epic. Play it if you havent

Are you sure the manga is 2/3's done or it's your personal estimation ? + Show Spoiler +Because Guts must improve a lot and has to beat a lot of insane opponent before reaching Griffith, If I had to put an estimation I'd say the serie is 1/2's done xd.
