The matchups I prefer to watch changed quite a lot over the last months, so I am curious what your preferred matchups are.
PvP made me almost angry a few months ago ( 4gate era), nowadays it is one of my favourites. It feels very strategic, there are many possibilities for creative plays, and a solid chance for late game as well. TvZ on the otherhand did change in the other direction. Not so much the matchup itself, but my perception. Maybe it is because I play P, so I don't have as much insight into those races. I sometimes have a hard time to read who is in the better position at a given moment (unless it's kinda obvious).
What do you like to watch? Did it change over the last months or has it always been like that?

There was a time in beta that PvZ was my favourite match-up to watch, then TvZ took that place and now PvZ is again very entertaining.

TvZ by far. The rest of the matchups usually end up with deathball vs deathball (especially ZvP). In TvZ there's a lot of multi-pronged attacks/drops and jockeying for position.

TvZ is just awesome. Muta ling bling vs tank marine is one of the coolest, most dynamic matchups in the game. It's all about positioning and timing, it's not just 2 armies headbutting into each other like a lot of other matchups are.

Either TvT or ZvZ for me. I usually find anything with protoss to be fairly boring as it just usually involves two large deathballs bashing into eachother.

Imho TvZ is more developed than the other matchups. It's just a kick-ass MU to watch!

i like tvz nowadays, it used to be tvp because of all the micro involved, but today its just a big p deathball a click with storm :/
of all the mirror matchups is think tvt is the most interesting by far

ZvT is simply the best in my eyes :D Such a good match-up in so many ways... the dynamic of large, extremely micro/positioning/control dependent armies like marine/tank and ling/baneling is exhilarating to watch, the tension of burrowed banelings and the excitement of mutalisk harass.
Personally I enjoy ZvT most when it's muta/ling'/baneling against marine/tank/(thor) and goes to a macro game, but things like mech vs. roach/infestor can also be entertaining too, since it's always fun to see just how each player deals with mech (something I've dealt with personally and have always enjoyed, yes I'm a Zerg player, of course.)
But the others are good, too :D To watch, at least. ZvZ is terrible to play, fuck ZvZ.

TvZ is easily my favorite, but then id have to say TvT is my second. being a protoss it is just so cool to see a game where the armies are beating the hell out of eachother yet it doesnt truely decide the game right then and there!

How the hell is PvP above ZvZ?
Personally, anything versus Terran is fun to watch, and ZvT (or TvZ) is probably the best. There's so much going on, dropping, runbys, etc.
And don't even get me started on good baneling hits (which are epic). Or bad baneling hits (which are hilarious)

It used to be ZvT but then came the blue-flame/random timing era and now it's either that T does damage and wins with drops or the Z rolls over the T with a deathball of bling, infestor, broodlord and ultra. Not fun to watch. Now I'm torn between TvT and ZvZ for best MU, but I feel TvT is more developed still.

As others have said, along time ago it was PvZ, and it turned to TvZ (once terrans learned the lategame stages and refined mechanics and played smoothly). Now though it is indeed turning back into PvZ I think. The deathball is less common every month and watching players like staphano/drg/coca who have good zvp play are amazing to watch. GSL finals will hopefully prove this
edit: i do love tvt bio vs mech games though when both players play well (depends on maps too, like on taldarim)

Its the most dynamic matchup. PvZ became pretty much a camping game where both players try to get to the Mothership vs. BL games
