Wow thanks for the responses everyone. I don't like to watch multiple series at once so I think I'll finish Ergo Proxy first unless it becomes really bad. After that I'll go with Tengen Toppa Gurren Lagann since a lot of you recommended that.

When I said it blew my mind it was more in the sense of it shattering my belief that most anime sucks. I'm not going to claim it's a masterpiece but I certainly enjoyed it and didn't find too many faults.

When it comes to anime don't question other people about their likes and dislikes. =P That is the #1 rule. There will always be people who hate anime that you think are amazing/complete masterpieces and vice-versa.
For the record I rated Trinity Blood an 8. I really enjoyed it. ^^

The anime has a lot potential but that's all. The characters were really disappointing, I don't even know whether I liked even one of them. Worst of them all was the pope. The second big screw-up is the story, I don't even know what they did with that. The beginning is bad and the story finally starts in the second half of the anime which isn't a positive point either, considering that it's a 24 episode anime. The end is pretty rushed. Don't know whether they know about pacing but they sure didn't pay any attention to it. And for the people who read the manga, there were also several things left out.
Watched it several years ago, so I don't know all the small details anymore, but the general issues should be fine.

I'm an older guy, so I can recommend some older series. If you like mecha, I would recommend Dual!. My top 4 favorite anime (in no particular order):
Initial D - Main character kicks ass downhill mountain racing in a 1985 Toyota Corolla (!)
Fushigi Yuugi (The Mysterious Play) - Shoujo and Fantasy/Storytelling genre, heroes have special abilities, etc. takes place in ancient China
Shoujo Kakumei Utena (Revolutionary Girl Utena) - shoujo with very good storyline, music and swordplay (main character is also hot which doesn't hurt)
Rurouni Kenshin - can't go wrong with this samurai
Definitely let me know if you get a chance to watch any of these and let me know how you like them.
