So I recently decided to stop eating meat. No real reason, just sort of want to see if I can do it. It's been about a month, and I've been slowly rediscovering food. It's now much more of a challenge, it seems to me, to find filling, tasty meals, particularly on my college campus.
Luckily we have a deli-sub type location on campus, and I've been experimenting with various veggie sandwiches, and I might have stumbled across the most damn delicious thing sans meat I've ever had.
You will need:
6 inch sub roll (try to get one with Italian herbs or some delicious shit on it Hummus Cheddar cheese (grated) Swiss cheese Lettuce Tomato Cucumber Oil Vinegar
Basically just smear the hummus on the bun, both sides. Sprinkle a little grated cheddar over one side of the bun, and a few slices of swiss cheese on the other. If possible, get the sandwich toasted at this point, so the cheese gets nice and melty.
Then you basically just lay down a layer of shredded lettuce, liberal tomatoes (I love the tomatoes) and a few cucumbers. Spray with oil and vinegar, wrap up, and dig in!
Try it if you can, and tell me what you think. The hummus is rather moist and pretty much eliminates the need for mayo or mustard. I would identify the hummus as the really unique and amazingly tasty part of this sandwich. You can probably try it with different flavors of hummus(I would try cracked red pepper). Careful though. Too much hummus and the bun gets soggy. Enjoy!

Cucumbers are one of the most underrated vegetables to add in a sandwich. I love them and add them whenever possible.

Oh I get a very simmilar sandwhich except it has alfalfa sprouts. Trying new stuff just cause is awesome, I was a vegetarian for a couple years - it was great.

I've been wanting to try just an all fruits and veggies diet. Been hearing good things about that type of diet.

Giving up meat is something I've thought of doing. I mean, morally, its the right thing to do, but can I really live without meat? I dont know. Someday, I will give up meat and see how life is, but until then; i applaud you and am happy that there are tasty alternatives.

yes! freaks me out that quiznos does not have cucumbers whose idea was that?? it is the only reason i walk a block to the nearest subway instead of walking across the street to quiznos

But Quiznos is original. Even though I admit, theres a Subway/Quiznos and Blimpies like 1 block from each other near my college.. I always go to Subway and get the foot-long for lunch.

Reading that description just made me sick. I eat nothing but meat and have a rather low intake of vegetables, especially on my sandwiches.

i'll give one that is so good... i know the recipe in spanish.. so i'll try to write the best i can :S
onion pie (or something) mass 200g flour 100g butter salt, water simple, you make a mass with flour and butter, water if needed, salt at taste (not too much)... you should know when is ready (not sticky, but cohesive), extend over a 28cm mold (diameter)
the filling 1-2 onion ("feather" cut) 200g(ml) milk cream 3 eggs 60-80g of cheese "crumbs" salt, pepper
you have to "saute" the onion and pour over the mass, then mix cream with full eggs (and some cheese), put the leftover cheese over all. and bake for about 20 min..(till is ready duh)
is so good... same idea differents fillings (keep cream, cheese, and eggs, change onions/ can mix 2 or more vegetables)
