Okay, I lied. This isn’t a simple clever twist on steak and fries, it’s “steak and fries” for people trying to cut down on the calories. I’ve substituted the steak for chicken breast, and the fries with carrot and radish batons. I made this because I tried to be clever with food after deciding I should start to eat healthier. That’s pretty much all there is to say about the dish, really.
Bake the chicken breast and the vegetable batons separately because they have different cooking times. The breast should take about 12 to 15 minutes at around 180C to 200C. Remember that there is no such thing as “rare” or “medium-rare” when it comes to poultry, so if the meat is pink, put it back in the oven please. I fried off the batons for a couple of minutes in the pan first to I could get some nice crust around the edges and also to reduce the amount of time they need to be in the oven. After frying them off, the vegetables should take too long to finish in the oven, I think around 8 to 10 minutes is good, so if you time things right you can cook the breast and the veggies together. Also, don’t expect the veggie fries to have the same crunchy texture as fries do, because they’re nasty posers that can never replace fries. Oh, don’t forget to season each part of the dish!
I tore some rosemary leaves for the garnish and sauteed some shiitake mushrooms. Looking at the whole dish now, I think I should have left the mushrooms out because they look kinda ugly just sitting there.
