First Korean Zerg you left off that comes to mind is Symbol. Second is Lucky. But I really can't think of many dominant Zergs outside of Nestea or DRG.

Supernova is Korean so he shouldn't be on the foreigner list even though he is on mTw. It was a more recent move than Taeja or Hero whom you have as Korean. I don't know if Vortix should be there either. Yes he did well the last few months but his best showing is in a European tournament with no Koreans. Most other foreign players (Dimaga, White-Ra, etc.. have beaten Koreans so they do deserve that spot). I know DeMuslim has had some great series against top players but I can't recall a great placing he has had to put him on a list with other foreigners who have won MLG, IPL, Dreamhack.
I do agree with most of the players though.
Oh and people might disagree but Alicia has been to a code S finals and placed second in two MLGs which isn't easy with the often stacked player pool.

I'm sorry, but Polt doesn't even deserve to be on there compared to Clide. Clide is absolutely one of, if not the best Terran player of his time or ever. Artosis said so haha.

KiWiKaKi above MaNa, WhiteRa, and Naniwa? Even when he was playing, he's had barely any results aside from the first few MLGs. MaNa, WhiteRa, and Naniwa, on the other hand, have all been consistently doing well/placing highly for God knows how long now. And each of them have results under their belts.
Nerchio above Stephano? Just...no. Stephano is the best foreign zerg, I don't really think you want to go and argue that point. Also, I'm not really sure Scarlett should be on the list - she is known for making a couple of upsets against Koreans, but very few results other than that. Definitely not above viOLet or Vortix imho.
It's pretty difficult to make a list of the best players of "all time" though. Players keep on making splashes and slumping. Who's really the best of all time, really hard to say. I think it's the players with consistency. People like MVP, who though not at his best, is still showing results at foreign tournaments, still staying in Code S. He's the guy that doesn't really disappear. Following the same logic, I would also name WhiteRa, since he's been consistently getting deep into tournaments, abeit not really putting wins on the table.
Someone like Fruitdealer though, I don't think should be on the list. He had his 5 seconds of glory. At one point he was the best, yes, but in the context of these last two years, he's just another zerg in the wall.

Zerg 1. DongRaeGu 2. NesTea 3. Leenock 4. Symbol 5. Curious
(by the way, I do believe that all of these Zergs are better than Stephano)

Absentees: - Seed... sorry, but he's only beginning his path of destruction. Give it some time. - Jjakji... he had his moment of fame. - FruitDealer... he simply has not made a huge splash on the scene except his first GSL win. - Lucky... he hasn't done anything in Code S.

I honestly feel like GSL is by far and away the most important league.
At their peaks, Mvp, then MMA. MKP is a big maybe, and Polt/Jjakji/Taeja need more GSL results to justify their being on the list- as of now I feel like they were/are all amazing, but not on the level of MMA, let alone Mvp, the undisputed king of SC2 .
Zerg: NesTea, DRG, FD. NesTea won 3 GSLs. That's pretty much enough to put him up. DRG and FD are the only other Zergs who won GSLs, so they get up there too. Also, FD was really good from Beta all the way till December of 2010. Not as short of a reign as people like to point out.
Toss: MC, Seed. Only toss who won GSL. Pretty self explanatory here, MC - 2 GSL, Seed - 1 GSL
Foreigners: Jinro- Not necessarily his open season 3 run, but his gsl jan run was very very sexy. IdrA/HuK- (IdrA)At one point he was the best player in the world. No other foreigner has ever had that achievement.(HuK)- beasted koreans both in GSL and in foreign tournaments constantly. A true nerd baller. Stephano/Naniwa- two opposites- Naniwa can do ok in GSL, Stephano rapes face in foreign tournaments. T-Zain- one TSL run does not a god make, though his smashing of the then best player in the world, MC, was quite impressive.

I like your lists, although Nestea is above DRG (considerably) in terms of historical success, consistency, and winnings. I'd swap them.

Your Korean list is decent. I dislike MMA but the fact is he has 2 GSL wins and should be 2nd on the list until MKP at least wins one more premier tournament. With Zerg I would put Losira at 5th as he has a GSL runner up, MLG runner up and code A championship. The protoss list is good but I personally would put Creator above Squirtle.
Your foreign list is pretty bad though, assuming you were going for a 'best of all time' list and not a 'best at the moment list.' It should go something like
Terran: 1.Thorzain 2. Jinro 3. Sjow 4.Kas 5. Naama
Zerg: 1. Stephano 2. Idra 3. Nerchio 4. Ret 5. Sen
