Sometimes it just makes me so sad to watch PvZ. BabyKnight made a lot of good moves and had nice micro, but 1 or 2 small mistakes cost him the game.

Lag during battles happens because of the way video compression works. The stream only updates things that change, i.e. you're only transmitting that one portion of the video where a unit is moving, and the ground textures etc are a static picture.
During big battles (and the intro video animation) lots of things are changing every frame, so the bitrate goes up. If you have a poor connection to Twitch servers, you're gonna get lag. It's not uniformly happening to everyone because some people have better connections to Twitch servers.
