Catz just went against the n1 rule of ZvP: Do not push the P expand with the army inside it unless you somehow took an insane advantage.

He invested a lot in static defenses, and at different points of the game too. What was with the giant lump of pylons and cannons on the high ground in front of his natural? I feel like if he'd invested into infrastructure he could have pumped out 200 quicker. At the very least, more units to try to set up a 3rd.
But anyways, it was really nice to see CatZ play with that strat. Getting this map-specific with your openings just takes this game to a whole new level. Watching TSL today, and then that game... very reminiscent of Brood War.

Of course they can. Protoss have the same scouting potential if not more than any other race.
explain how? with 3 gate expand you have to put down a forge a 2 cannons to be safe from roach ling allings, p needs also to spend 100/100 on hallucination that only come after the cannons and forge if he also wants to do some timing it has to be some sort of 6/7 warpgate all in since all other tech root comes too late before the greediness of zerg paids of
so p has to do a inefficient risky timing if z is being greedy and being behind on tech if z is playing safe
EDIT: i mean look at this game how came catz with a hatch first and knowing p didnt have a nexus at minute 7 decide to do a roach ling all in??

I sure wish Protoss was more exciting to watch 
They are definitely the least exciting of the 3 races spectator wise.
