its effective because you can beat much larger amounts of zerg units (that are still managable: i.e. midgame comps) by forcefielding. with the amount of sentries he gets he can practically infinitely forcefield, meaning zerg has little chance to win because he can keep segmenting wave after wave and fight in a strong position.
if you can't forcefield like him, don't do the build :p
While it's true that forcefields are fairly important with this build, Day9 proved that a 2/1 protoss army at 12:00 will trade pretty evenly with any zerg army at that time, even without forcefields. In addition, the 9 gateways that you have allow you to reinforce almost as quickly as the zerg player. As stated before in the OP, it puts zerg in a really awkward spot because they need a ton of tier 1 units to survive and can't really afford to tech up, but Stardust's particular composition just shits all over roach/ling.
