Well, there are a lot of routes to go between the first two gyms and I still have at least a dozen left to evolve. I also know that I've missed some.

100 caught by the 2nd gym seems reasonable.
Some Pokemon are Horde-only, so if you are going for completion as you go, make sure you are using Sweet Scent/Honey to meet Hordes on every route after the cutscene that introduces them to you.

Yeah, I just left the Frufrou castle thingy, so idk how close I am to anything really.
I just DEFINITELY haven't caught 100 things yet. I might be getting impatient and not getting everything though. Also, I'm going to have to teach something False Swipe soon because of how high my Pokemon levels are.

I stopped using my starter after the castle, I've been using a team of full randoms that needs an evolution since then (the exception being the second gym, for safety); but you still have a long way to go until you get to the gym. Levelling Nincada was a pain since you need a slot free and a Poké Ball to get Shedinja.

Turn off Exp Share and/or start leveling more Pokemon. I turned off Exp Share right around where you are, and everything evened out for me somewhere between the 2nd/3rd Gym.
You shouldn't need a False Swiper for a while if you have a Pokemon with Status that's weak to begin with to finish things off that you're catching. I used Butterfree for a while and am using Gloom now (Sleep Powder + Sweet Scent + 2 attacks).

Personnaly, I just use a Farfetch slave for fly+cut+thief+false swipe and the Lapras with strength+surf+waterfall+rock smash
Having all the environmental or utility abilities on two pokemon only is pretty handy.

Thanks! Is this deep min/maxing that necessary to win battles? Or could you do well with a good lineup that isn't min/maxed? I'm pretty sure I'm way too lazy to min/max, but would like to try battles as long as it's not a futile pursuit.

Yeah, I am using a Butterfree for that purpose.
I think at some point I'm just going to make another full team instead of turn off EXP Share. While turning off EXP Share would definitely be what I would want if I only wanted my 6 (like most Pokemon games), there are so many cool and fun Pokes in this game that I kinda just want to level like... 8 teams.

I've currently got a box of cool Pokemon to use later, but for now I feel like swapping so much just kills the experience in a way of having a team slowly progress through the game.
Though what I've started doing is when I'm in a new area that I'm trying to catch Pokemon in, I'll grab one of those, Gloom, and 4 Pokemon I'm evolving for Dex credit and just run through the area with Exp Share on while I'm trying to catch everything, leaving my main team out of that.

Depends on how competitive you get. For the story/side quests, min/maxing is in no way necessary. If you want to play your friends, it helps but you'd be fine without. If you want to get really competitive though, well there you go.
