I aggroed 2 characters, first, the knight right outside sen's fortress, and then, when I went to pay to absolve my sins, I aggroed the priest T_T

And all the minor technical things like not-smooth-at-all camera(which makes your head hurt after couple of hours) or mouse cursor not hidden (have to use 3rd party to hide it)

Don't get too hung up on the fact that you started as a thief. Starting classes really mean nothing other than the stats and gear you begin with. Do not think that you are going to be able to run up and backstab every enemy in the game because it won't work. What build you are going for is not going to really matter until you get to a higher level. For starting out, I would just get the minimum stats to use your weapon and shield and then get some vitality and endurance. As you level up, you can then later start putting points in int/faith/melee centric stats as you wish.

Its possible but incredibly tedious, I dont think anyone who's used a shield in dark souls would ever consider ditching it.

Dodge>Shield. No, really, it is. Dodge is OP. It actually makes all the bosses easier for me, blocking will drain a ton of stamina and blockstun, making it quite risky to block a boss at times. Especially the goddamn Bed of Chaos, blocking that is almost always suicide, whereas dodge rolling makes you roll through the arms. The only time I use a shield anymore is when I want to parry, or when I want high deflection from eagle shield/other greatshield.

Ouch, the one guy you can't aggro and get away with it. If the blacksmith you aggroed is Andre in the parish, I'd honestly just restart a new game.
Shields are useless for some builds to be honest. Nice to have against small fry, but against boss you are better of dodging like Fyrewolf said. Some bosses are ridiculously easy to dodge by the way, it's kind of funny but lately I've been having more trouble getting to the bosses than actually dealing with them.

Oh right I had forgotten about dodging. My char wears full stone armor though so hes kinda slow and more tanky, for me a not having a shield is just undoable, I can barely dodge anything.

I play with <25% equip load and still use a shield. Dodging is a lot of the times better but on some parts, you don't want to accidently roll off the edge or roll close to the edge and get hit off. Plus I use the grass crest shield, so it gives a really nice bonus even if its only on your back.

I also accidently attacked that priest guy in firelink shrine at the beginning of the game and had to kill him. Then when that girl and her companions showed up they instantly aggroed me and had to kill em too Is there anyway to learn the healing spells other than him?
Dodging does require more skill than merely taking a hit on the shield, so for beginners good shield is better choice, but as you improve in the game, you will probably start dodging more, rather than blocking. Lately I've started just wielding with 2h against bosses and evading their attacks.
Had a lot of troubles with Quelaag with my pyro as she is immune to fire. Had a help from Mildred and one other guy, they both died but I managed to finish her off.

Like in the first video, at the beginning he firsts complain about the pseudo-tutorial. While so-called AAA games have shitball tutorial, you actually have to learn in Dark Souls, and this is a reason why the game is so great.
